We always say “puh can” in SE Alabama. My Florida relatives always called it “pee-can”. Also, Dothan isn’t pronounced as “Doth-an”. The Do is more like “Dough”-than (if that makes sense). We also didn’t make our fried chicken with hot/heat spices. I’m sure some did, but our family did not. Even in Alabama, the way traditional food was cooked varied from family to family. Alabama White Sauce aka white BBQ sauce wasn’t even a thing when I was growing up there. I think it was more Birmingham and N. Alabama. I lived in N. Alabama until I was four and we ate chocolate gravy with biscuits. My adoptive family in SE Alabama never ate chocolate gravy (it’s so freaking good). My ex-husband’s family in Kinsey, AL ate tomato gravy with biscuits. My adoptive family in Columbia, AL (just a couple of towns away) never ate tomato gravy. Boiled Peanuts are the best! I miss them so much here in WA State. My family always ate them the traditional way, which means no Creole. I think Creole Boiled Peanuts are more popular today. The best boiled peanuts are from stands on the side of the road or at a football game. Also, love Brunswick Stew, Divinity candy, Pimento Cheese…oh, I need to move back to SE Alabama.
