Who is Dr. Ergin? Dr. Ahmet Ergin is an endocrinologist with a particular interest and passion for diabetes care. Dr. Ergin earned his medical degree with honors at Marmara University School of Medicine in Istanbul, Turkey. Then, he completed his internal medicine residency and endocrinology fellowship at Cleveland Clinic in Cleveland, Ohio. He is a board-certified physician in Internal Medicine and Endocrinology, diabetes, and metabolism. He is also a certified diabetes education specialist.

Actually, “Wild Rice” which is really a seed, is the best alternative I’ve found… I mix it w/ veggie rice (cauliflower rice) and sometimes brown rice or not at all. No spikes, and mixing it like that really FLUFFS it up and is really satisfying 😊

Original hard red rice (not the quick cooking red one developed in USA)the hard rice is best soaked in water over night before cooking.good for diabetic.using overnight rice lowers sugar content

I am Cuban so you can imagine how difficult it was to give up rice. But when I faced the choice between health or taste, I opted for health and I never looked back. I haven’t had carbs, sugars, or dairy for almost two years. It is easier than your think. I substitute carbs for cauliflower.

I am Jamaican and I love rice, so to keep down the carbs I cook it with large quantity of beans and moderate amount of coconut cream.

I have had this battle with my MD for years. I eat Basmati Rice for years almost every meal. For some reason it has very little effect on my Blood Sugar. Ran several test 2 or 4 hours after eating . Blood sugar goes up depending what I eat at same level with or without Rice. Dr. now agrees with me. Been a diabetic for over 15 years. A1C now at 6.5 with Trulicity. Was at 7.5 without Trulicity. Not overly active and 72 years old.

Check your blood sugar at 1 hour. Sometimes waiting 2 hours doesn't show the true spike.

I’m on Trulicity too. My blood sugar is in the 90s to low 100s. My A1C is 6.7. I eat a lot of carbs, especially rice and potatoes. However, I have diabetic neuropathy. My blood sugar and A1C may be okay, but not so much with the neuropathy pain. The higher the carbs I eat the more pain I have in both legs and feet. I’ll do my best to eat less carbs but it’s not going to be easy.

I don't eat white rice anymore my blood sugar is going high in the morning . Nowadays I ate cauliflower and Broccoli rice, Tofu, Tempeh and fresh vegetables! I'm OMAD diet one day meal. When I check My blood sugar in the morning is 6. 👍❤

I love ❣️ rice, but I recently "discovered" cauliflower rice and I totally love it especially with chicken 🍗 or fish 🐠 and other veggies and I can feel the difference in my body.

@Krystal My Cauliflower rice is not exactly rice, but it is still pretty good. Because it lacks starch, the texture is slightly different than rice. Cauliflower has a very mildly distinct taste on its own, so it takes on the flavor of whatever you pair it with, so it is a pretty perfect substitute for rice. I always buy the frozen bags. I have made it myself in the past, but that was a big hassle to me.

@@Tes7000 Agreeing with Lauren Cantrelle Lifestyle and with Tes7000. I've been using cauliflower rice (it's just essentially grated cauliflower, so it tastes like and has the texture of cauliflower) for over half a year. It does not taste exactly like rice, it does not have the same mouth feel as rice, but once you make it into something--I like doing cauliflower fried rice) you can hardly tell the difference. I purchase it pre-packaged in my grocery store's frozen vegetables section (Aldi in the USA is good for it).

I am not a diabetic and want to avoid becoming one, so I switched to a low carb lifestyle 2 years ago. I consume no more than 50 net carbs a day and have lost 94 pounds, no longer have gastrointestinal distress, and even those white bumps around my eyes that are caused by high cholesterol have disappeared (without medication). The solution to our obesity problem starts with a diet devoid of inflammatory, highly-processed, high carbs foods.

Great video. In our part of the world, rice is boiled until it is little soft, and then strained, thereby extracting a lot of starch from the rice. Only then it is put on the table..

I use the cauliflower rice with curries and enjoy that. In the past I have eaten buckwheat which has a lively nutty taste and a GI of between 30 and 35. It was great when added to mushrooms, onion and herbs like parsley and dill, sometimes with sprinkle of paprika. Good at breakfast as well with a poached egg on top.

its usually the excessive consumption of carbs, and the combination of fat and alot of carbs that cause most of the problems in people. to us asians, fried rice would be the most common obesogenic thing. that thing is just so easy to overeat. it hacks into your brain, stimulating a strong dopamine response. it doesnt give much satiety as leptin isnt produced much in the presence of fat and carbs together. its also good to understand the randle cycle. fat and carbs compete with each others oxidation, raising blood sugar and triglycerides simultaneously. add to that the fact that carbs stimulate insulin, which would shove the fat into your fats cells, and inhibit fat burning. i assume butter with alot of rice would also have a strong obesogenic effect.

A study in England years ago showed that if you cook, then completely cool and reheat pasta, it creates resistant starch and doesn't affect blood sugar as much. The studies were also promising for rice and potatoes. I tried that and both my husband T2D and myself, pretty diabetic, had good results.

Interesting study. Tamils hailing from South Asia have for hundreds of years used “pulungal arisi” or par-boiled rice to cook rice. The paddy grains before removing the husk are boiled, dried and de-husked to get rice grains. Not all bran is removed so it is more rich in vitamins. Then these are packed and sold. The process probably does the cooking and cooling process before being sold. Probably also the boiling before removing the husk and bran infuses the nutrients into the rice. The rice takes longer to cook and digest. Usually it is also cooked with more water and strained before serving.

This sounds great but I can’t eat things like Pearl barley or quinoa as I also have ulcerative colitis. So many things that could help my blood sugars I can’t eat!

Thanks sooooo much for your explanations concercing diabetes, which helped me so much. Since a long time I am eating low carb, now intermittent fasting, taking supplements in good quality, sport regularly and I am so happy, my blood sugar went down. Keep on your good work, which is educating so many people with diabetes (me included). Here in Germany you can't find a doctor, which really has a good and solid knowledge of diabetes. I read about a study done in the UK where they discovered that if you cool pasta, rice or potatoes the starch component is drastically reduce and if you reheat the reduction is increased even more by 50 percent. The starch is changed into resistant starch which takes much longer to be processed. I've tried it with pasta and instead of a huge spike it only goes up to about 125 on the glucose meter, and since I've been intermittent fasting for around 2 years, I'm always normal by the next morning. it's been a while since I read the study so I can't remember the details, but it seems to work.

Type 1 diabetic, I love rice! I did switch to brown rice which doesn't seem to spike my blood sugar like white rice. I am definitely going to try these substitutions you've shared. Last night I tried a cauliflower flower crust pizza and it was delicious! It was nice to enjoy something I really love to eat and it not spike my blood sugar So happy I found your channel

Glad to know this. I don't care for brown rice and white rice is my worse enemy when it comes to diabetes, but have tried quinoa and riced cauliflower. I actually enjoy them.

One can go for Basmati rice, the long grain rice which has low Glycaemic Index. Either one can prepare Chicken Biryani or Vegetable Biryani with Basmati Rice.

I bought some of the “miracle” noodles, and my daughter got upset when she found out. She told me it’s made from the Japanese konjac plant. She lived in Taiwan, and was warned by the locals to eat it very sparingly. She said it can cause terrible constipation and abdominal pain. Well, I’d already eaten a good sized serving….let me tell you, I won’t eat it again! I had purchased two packages, and threw the second one away. Another example of “If it sounds too good to be true….” Also, the texture was a little like chewing rubber bands. 🥵

I tried shirataki noodles years ago and found the texture absolutely disgusting. I saw a video years ago in which the shirataki noodles were dry fried first to improve the consistency, but I haven't tried it yet.

Oh you poor thing. Exactly right, if its too good to be true..... Cauliflower rice would do that to me. Brassicas are notorious for triggering gut cramps.

I’m not diabetic but can’t eat much wheat so am familiar with a lot of alternatives to rice (which I can eat with wild abandon since it doesn’t do anything to me, but I need variety to avoid developing new allergies!). But adjusting your idea of what is a normal portion would seem to be the best way to reduce glycemic load, which is what matters. Ignore the package recommendations. Think of half a cup as a normal portion rather than 1 cup or more, 1 or 1.5 ounces dry rather than 2 ounces. And eat along with low glycemic foods like beans with a lot of fiber which will slow down digestion. Also just testing yourself can tell you which combinations of foods and portions really spike your blood sugar and keep it up there longer than you want. Millet is relatively low on the glycemic index scale, no worse than brown rice and maybe better. And it cooks up just as fast as white rice (same cooking instructions). It is also very tasty. It is a whole grain and like rice it is gluten free. Teff is another one that has a lower glycemic index than brown rice. Tiny little seeds but you can also buy the flour. Can make a porridge from the seeds but the flour also makes wonderful crackers and flatbreads/tortillas. Very popular in Ethiopia for that purpose (injera). Gluten free as well. Sorghum is about the same or sometimes lower than brown rice on the glycemic index scale, depending on variety and form. It can be used like corn. Unfortunately popped sorghum (which is delicious, looks like tiny popcorn for Barbie dolls) is higher.... But corn (maize) also has a lower glycemic index than brown rice, including popped. Both sorghum and corn are also gluten free. Barley is very tasty although not gluten free. But don’t forget about gluten-free buckwheat, which seems to be about in the same category as far as glycemic index is concerned. Buckwheat groats are available to use like rice or as a porridge. I was able to buy them even decades ago in regular grocery stores, but had to look in the “international” section or where you find things for traditional Jewish cooking like matzo. You can check out buckwheat noodles and pasta to see if any are suitable for you. I like the flat 100% buckwheat noodles or ones mixed with sweet potato etc. (often in the Japanese soba category). Orgran has good buckwheat blend pastas. And firmer pasta has a lower glycemic index, so try al dente cooking. Might be worth looking at gluten free pastas in general that are blends of various foods, including beans and lentils. You can check for their glycemic index on the web by using the keyword “glycemic index” plus the name of the product. Also check out rice pastas that include rice bran, that might bring them to at least the brown rice category (and they tend to be tasty and hold up well in cooking).

I switched to black rice & seems to help me. I eat it with mostly veg & egg omelette with cabbage. I stick to small portions like 2-3 tablespoons & lots of different kinds of veg. Portion control helps. After each time I have some food, I don’t sit back relax. I make it a habit to stand or go for 15-20 walk to help me settle my food. I usually feel better afterwards.

I have read that wild rice and specifically black rice are much better than white or brown. I used black rice for a special occasion meal.

I’ve been eating a bowl of rice in the morning with my breakfast. Lately I’ve been eating Korean style breakfasts in the morning for the last month. My blood sugar has been low between 120 - 134. I’ve been eating Banchans or an egg on my rice with paprika and black pepper. I’m active too For exercise I work with the weight machines, aerobics, and walking I have become more vegan too. I eat a little chicken and fish. I cut out soda And consume more water, or lemon water

I think if you wash the rice after boiling or double rinse it after boiling . It will take out maximum startch.

I normally soak all types of grains over night & try to reduce alot of starch. I don't eat large portions. However, I discovered it aren't about the carbs... it appears it is just my body system. Thank you for your precious information.

Hi Doctor. Can you rinse regular rice first also to get some of the carbs out? Also, there is quick barley, but I'm assuming it's not the same as the Pearl Barley you were referring to.

Uncle Ben's Converted Brown Rice is 20 on the GI and the White is 22 GI. For someone who only eats rice if I'm having beans and rice 1 or 2x a month, because I'm not a rice eater other than that, that's better than the Quinoa and it's an alternative for people who like rice.

Yes he is very handsome.and no I never liked rice I live on home made soups and salads.i was a pre diabetic and refused to take a pill I'm now down to 5.4 5.5 a little higher in the morning so I dont eat until lunch time.its hard but anyone can do it and it does not happen over night.

For breakfast I mix pearl barley, quinoa, lentils, oats,brown rice, and chicken peas with either a little honey and mixed berries with cranberries. Or the grains with tomatoes, green chilies, and hot sauce.

I make an olive oil vinaigrette with gerkin vinegar and mix it in the rice. Vinegar will dampen the GI response. Plus i also have protein with the meal which will change the overall GI. Just avoid naked carbs.

Thank you for the information. I'm trying to keep the diabetes, heart disease, and cancer away, and of course loose some weight. I had cancer over five years ago now, and since was told that I was prediabetic, blood pressure problems due to anxiety, but still need to keep under control. I do feel that a proper diet can give the edge when keeping disease away. Thank you for the barley, quinoa, miracle rice food tip.

I found the texture of shirataki noodles to be really disgusting when I tried them years ago. I saw a video on RU-vid in which the noodles were dry fried first to improve the texture. I haven't tried it myself yet, so I can't say if they actually became edible.
