Recipe of a typical Piedmontese dish, the "Ris & Coj raviole" which translated from the dialect are the Riso & Cavoli Ravioli.
For my personal taste I chose to make Tortelli instead of Ravioli, I think they fit better.

🌱For the Fresh Pasta:
🍂300 gr Flour "0"
🍂150 / 180 gr. of water
🍂1 Pinch of Salt
🌱For the Stuffing (In the video I made twice as much, the part that is left over I use the next day to make the rice in the jump)
🍂350 gr. of cabbage
🍂100 gr. of Riso Roma
1 tablespoon of Almond Butter
🌱 For the broth:
🍂2 Celery stalks
🍂2 Carrots
🍂1 Onion
🌱For the Seasoning:
🍂10 gr. Fresh aromatic herbs
🍂Olive oil as needed
