I am a widow, and have a hard time cooking for one. (It just seems like too much trouble) So I seek out wonderful, quick, easy recipes, so that I can eat a real meal, instead of a can of soup. This fits the bill, and I'm sure I could cut it in half easily. Thank you for yet another great idea.
I agree that's it's so hard to cook for one person. This is really good reheated. If you're alright with eating leftovers, you can just reheat in the microwave for a few seconds. My philosophy is "Cook once, eat twice". Melissa and I had two meals from this so if you cut the recipe in half you should still get two servings. I hope some of our recipes can provide you with good, homecooked, delicious meals. Happy New Year.

This looks delicious, Tom! And you mentioned empty nesters. I remember when our sons all grew up and left our home for college and then for good when they married. We missed our kids too. More than I thought I would. More recently my husband died of brain cancer so now my house is silent at times. I really long for the days when my household was busy with life going on. I really appreciate recipes like this bc it’s easy and looks so good. I don’t like complicated food just for me. God bless y’all!
Perfect timing! I am going to use the frozen Lobster Ravioli I have on hand. It’s deep winter here in Vermont, so hot pasta is a fav. PS Tom- you remind me of my late Dad…so comforting to watch you and Melissa.
I also have some lobster ravioli. I bought it at Costco the other day. I saw this recipe and knew I have to give it a try with the lobster ravioli! I wonder if it would taste good if I put a little extra garlic in there. I love garlic. ~Sharon from Florida

made this tonight, had a salad with some hot bread and it was delicious.....Gonna try the Russian chicken recipe this week.....by the way, found the Russian dressing at Walmart...bought 2....
A little bit of the pasta water helps to thicken your sauce and make it a little richer. I promise it wwont water it down it only makes it better. My family is very italian and my grandmother would tell you dont throw that water down the drain until you thicken your sauce. Mind you it is just a small amount of the water. Try this with your spaghetti also. The salt water makes it taste wonderful.😊
Well, here I am again!! I just LOVE adding your recipes to my repertoire!! I am the social chairman of my local PEO chapter. We have just scheduled a Mama Mia Italian evening with our husbands for October! It will be so fun to take this recipe and the Baked Ravioli Casserole as my contribution!! A trick I found for avoiding corn starch lumps in your gravy or liquid without whisking is to put your corn starch in the measuring cup first then add a little liquid and make a slurry then add the rest of your liquid
Made this for dinner tonight. It was a winner! I didn't have just Basil, so used my Italian Seasoning and it worked great! Thank you for sharing this recipe!

For the sauce: butter, fresh chopped garlic, fresh parsley chopped, a little white wine and salt, simmer and reduce, pour over Tortellini and mix, top off with Parmigiana, voila!

Use all heavy cream & don't use the corn starch....or just use some Cream Cheese .....anything is better than cornstarch....can even use Chia seeds.....it is a thickening also and I don't find it has a taste.....I use it in oatmeal or anything else I need to thicken ....as I hate cornstarch....
