Traditional Goulash Recipe | in 5 Steps | Transylvanian Food ep. 3

I will leave the recipe here to:
INGREDIENTS
1kg beef rump
2 ox tail
200gr pork fat or oil
1 slice smoked lard
2 carrots
2 pepers
2 large onions
100gr tomato puree
2 tbsp sweet Paprika
1 tbsp hot Paprika
1 tsp salt
1L veg stock
100 gr celeriac
1 small parsnip
3 potatoes
100gr sweet pepper paste
PREPARATION
In a large pot put all the vegetables except the potatoes and cook them in oil until they start being soft ish (all the vegetables need to be cut small). After start adding the meat and the ox tails. Cook everything and mix from time to time. When the meat change the colour start adding the spices,mix all very well and add the stock. Cover with a lid and leave it on small heat untill the meat is cooked . After that add the potatoes peeled and cut in chunky pieces, cook for another 20-25 min and add the pepper paste and the tomato puree. Cook it for another 10 min on medium heat and is ready. Yoy can serve it with some nice pickles on the side ,rice or just bread! It is a delight!!!
I cooked maybe the most famous Transylvanian dish, Beef Goulash!For sure one of the most delicious dishes from around the world,i would say it can compete easily with the French Beef Bourguignon or any other beef stew! I will leave you here the recipe and make sure you follow the exact steps to cook it!

I swear, half of the people who watch “traditional” goulash recipes only do so to complain “you are doing it wrong”. Cumin versus caraway, soup versus stew, oxtail? There is no oxtail in goulash! I don’t know what it s about goulash, but it brings out the food purity police in droves. It’s food, people. Everyone’s grandma made it her way. Hey, your goulash looks great!

Thank You for your version of this. I’m gathering meats and ingredients to eventually make a pot. I don’t know if I will find ox tail in my area but shank meat and cut up beef roast will be the main meat for mine AND the pork fat! In about two weeks, I’ll be making a pot and hope it turns out as good as this looks.

My grandma was from Budapest and was a fantastic cook. Chicken Paprika, Cream Spinach, German Pancakes, and of course Beef Goulash were among my favorites. My only regret was not getting her recipes. From what I remember, my grandma used beef oxtails for her goulash, and she would spend an entire day cooking. I may be wrong, but I think she added sliced mushrooms rather than potatoes? When it came time to serve it, she would pour the blood red, slightly brown goulash over a plate of cooked butter noodles. OMG, the beef was so flavorful and tender that it would just melt in your mouth. I tried making it some years back, but the oxtails were tough as shoe leather and I didn't dare trying to make it again. Now that I found your post, I am very much tempted to trying it again. BTW, if you have recipes for chicken paprika or creamed spinach, I'm all ears!. Huge thanks!

Your Goulash looks SO good! I have to make it this weekend. You are an excellent teacher and so neat. Question for you......are you happy with your knife? It seems to be very sharp and I like the round tip. May I ask where you got it?

You need to try the recipe and i will adk you to let me know how it was! About the knifes i am more than happy to be honest. Is my favourite set. I recive them as a present 4 years ago and if i am not wrong they was ordered from amazon. On Sunday i will post a new video with Hugo! You will have a lot of fun watching this😆

I guess there was no garlic in case Count Dracula comes by for dinner. My maternal grandmother was from Transylvania Romania and my paternal grandparents were from Hungary.

@HugoAndDaddyCooking If you'd met my grandmother's sisters you'd know Dracula's wives had nothing on them. I'm definitely one quarter vampire. That's where I get my vicious side. Hungarians have three genetic traits I inherited. They are born knowing how to cook. They are all crazy. They are geniuses. British are the world's worst cooks. All they have to do is look at food to ruin it. Vlad Tepes the great impailer was a hero of Romania. He stopped the invasion of the Turks. I read Bram Stoker's book when I was 7 years old. I When I was 10 my mother sowed me a Dracula cape I wore around the neighborhood. I told you I'm crazy. My father had to teach my mother how to cook. Bela Lugosi was the best Dracula. My sister was a violin teacher. She had a student who was a 6 year old girl whose mother was Romanian. She already knew all about Dracula.

I have recently used Aleppo chili which has a bite but not too much. I also mixed it with the hot and sweet paprika. I recommend the Turkish Aleppo or Halabi pepper.

Mr. Marmorstein, my ex-wife's Hungarian grandma used to make goulash similar to yours and also a soup/stew, and the closest I can come to recalling its name (phonetically) is pet-sen-yeh. Thankyou so much for this but it's very hard to get oxtail where I live, it needs especially ordered which could take a while. Could I leave it out. Probably not, it wouldn't be authentic then

Dont worry about the ox tail. If you dont have ox tail just boil some beef bones . Is just for the extra flavour

I had goulash in austria and germany, but was made with deer instead of beef, i guess it was simular apart from that.

In the area locations between Pittsburgh and Cleveland there are a lot of Hungarians eastern Europeans and there are even some Romanians. There is a Hungarian restaurant specifically in Pittsburgh if it’s not exactly in the city it’s in a barrel chest right outside called Jorsa corner and they have a style of Transylvanian goulash however instead of beef it’s made with Boston butt or pork shoulder which is the counterpart to chuck roast but in pork it’s a very marble fat cut of meat. And the goulash is made with pork long story short. And they also put sauerkraut in there. I’m not too much of a fan of. But I wonder how pork goulash goes down?

When you use bacon is this a smoked flavored bacon? Like how we use American bacon? Because there’s also steakhouse bacon which is thick but it has a smoky flavor. European bacon such as Irish and English bacon etc. just has a Porky flavor which I’m not too much of a fan of. I don’t even like guanciale or pancetta But that smoke makes all the difference in the bacon. Do Romanians smoke their bacon?

Goulash is an ancient Romanian dish. Even pizza. It was first baked by the Dacians who are Romanians. Also chorizo, serrano ham, Viennese steak and camembert cheese. :-))

False! Goulyash is a Hungarian word, because it is Hungarian food. Romania IS Hungary. Why would Romanians use a Hungarian word if the dish was Romanian?.... they wouldn't because, it's not Romanian.

I don’t think you would have used cumin because most goulash uses caraway. Problem is that the translators tend to translate Kmin as cumin , but really, it’s caraway. Looks good , a lot like my Slovak goulash . I don’t use oxtail, but I think it would be a very good addition. 😋

@@HugoandDaddyCooking There is our most famous dish .. Brynzove halusky s oshkvarkim. It’s a small potato dumpling with sheep cheese and pork cracklings. It’s the national dish and there are even festivals and halusky making contests in Slovakia. I confess, it’s not an easy dish to make here in Canada. We don’t have the same variety of potato’s, don’t have the same flour, it’s hard to get the right cheese, and cracklings is not easily available. Maybe there’s a Transylvanian version of dumplings and cheese you could make? I’ve never has a dumpling I didn’t like 😊

@@HugoandDaddyCooking Never ever would be cumin used in goulash. It is caraway seeds that are being used. Cumin is the dried seed of an herb plant (Cuminum cyminum) that resembles parsley and is used in Mexican, North-African and Indian kitchen. Caraway seeds from the plant Carum carvi are known as "chimen" in Romanian or "kömenymag" in Hungarian.. They are crescent-shaped, long, and have five pale ridges. Caraway is more common in the Hungarian and Transyvlanian kitchen and is typically used whole, not ground. It has an anise-like flavor and aroma that is popular in breads (especially rye breads), cheeses, sauerkraut, and root vegetables and goulash...

Goulash (gulyás) is a national Hungarian beef soup or stew that's very rich and seasoned with sweet paprika, cumin, garlic and caraway seeds. It is a staple dish in many homes in Hungary. Hungarian goulash is nothing like American goulash, you need to cook it low and slow for that incredible depth of flavor
