No Ukrainian or Russian Easter celebration is complete without this amazing, buttery and flaky Ukrainian Easter Bread, also known as Kulich! I’m sharing my family recipe for this traditional bread, dotted with dried apricots and cranberries and glazed with royal icing! This delicious, sweet yeast bread has been a staple in Russian and Ukrainian Orthodox Easter for millennia and is still immensely popular to this day in Russia, Ukraine and other Eastern European countries. You can also find this recipe in my new cookbook, Beyond Borscht, which includes 75 Eastern European recipes!
INGREDIENTS:
1 cup (240 ml) whole milk
1 tbsp (6.5 g) dry active yeast
1 cup (200 g) white granulated sugar
2 large eggs, plus 2 egg yolks
1/3 cup (82 g) sour cream (not low-fat)
¾ cup (170 g) unsalted butter, melted
1 tsp salt
5 2/3 cups (708 g) all-purpose flour
1 cup (g varies) mixed dried fruit, nuts, chocolate
For Royal Icing:
3 oz (105 ml) egg whites; about 3 eggs
3 ½ to 4 cups (420-480 g) confectioner’s sugar
3, 6-inch (15-cm) paper bread molds
Rainbow nonpareils

I loved eating this bread as a little girl, my grandfather always brought a few loaves home, and it was all gone within a day. Thank you for reminding me about a wonderful part of my childhood in Odessa. Will be ordering the cookbook today...wish I could also get the matryoshka apron though hahaha love that!

My parents immigrated from Ukraine to Montreal, Canada and my mother made the best Paska’s.This year for Ukrainian (Orthodox Easter May 2), I will be making a few paskas, some with raisins, some without. My favourite bread! TFS!

Those fruit loafs are fantabulous! The speckles of fruits in there especially the cranberries (my fav) just got my attention, and the interior of them look so buttery! All I need is some cream cheese to spread it on..

Made this recipe last week and it was absolutely delicious. It's time consuming but well worth it. I used other recipes but it's not as moist and fluffy. This will be my go to recipe from now on.

I absolutely love this Easter bread! I have been looking forna good recipe, so I'll definitely have to give this one a try!! 💕💕 If I was to divide the recipe up, do you think it would work if I tried making it in a bread machine? Also, have you ever made the traditional Easter Tvorog with the raisins? My mom makes this every year, but I personally have never tried making it. Me, too! :) It's so, soo good especially when it's still warm! :) I hope you enjoy the recipe! I've never made it in a bread machine, it might work if the machine has a setting that will allow the bread to proof properly... Was the tvorog a cheesecake type of dessert? I have a recipe for Sirnik in my European Cake Cookbook, it's made with raisins or dried cranberries :)

@@TatyanasEverydayFood I absolutely love it when it's still warm, my favorite way to eat this bread 😍 I am going to try it in my bread machine as a test run. If it fails, oh well, I'll do a portion for one loaf, so if it fails at least I'll know...lol. The Russian Tvorog is made from farmers cheese. It's basically like a cheesecake, but the consistency is supposed to be kind of like cottage cheese without the moisture if that makes sense. It's definitely not as creamy like a cheesecake, but I love this stuff. My mom makes it using the yellow raisins, here is a similar recipe, but I know my mom makes it slightly different then this video I found, but this is the idea behind what I'm talking about. We just use regular bowls and don't use the molds. The key is to make sure you get all the moisture out of the farmers cheese to get it to the correct consistency. If you ever have time, research it and find a good recipe. It's delicious! You're very welcome! :) It's my favorite bread! Yes, the proof setting will work great. I also like to fill a large pot with hot water and place into the bottom of the oven, keeping the dough in the middle. This will add extra moisture into the oven, proofing the dough better.

Hi! Sorry, I've never weighed the finish loaves. I've used small molds for 3 loaves and larger molds for 2 molds. Never had any issues.

For the second time I used only 1 bigger one and 2 smaller ones. I am doing second proofing at the moment. I am sure they will be done perfectly. Thank you for the recipe! I liked it! It smells and tastes good 😊

Hi! Yes, you can make the dough ahead of time, but you'll need to make a slight variation to the proofing. Proof the bread for until it's almost ready for baking, then place into the refrigerator overnight. Remove from the fridge the next day and allow the dough to come back up to room temperature and become fluffy again before baking. You can also use Greek yogurt in place of sour cream

@@gayanadokuzyan3045 It's the best the first day, but it will be good for up to 3 days. It starts to dry out a bit after that. I keep mine in a sealed bag at room temperature.

I recommend enjoying this bread fresh. It's the best the first day it's baked. If you do freeze it, I recommend warming it a bit for the best experience.
