I'd suggest soaking the bamboo skewers in water before using them to skewer stuff. It helps to prevent them from catching on fire. Great recipe btw! Turkeyyaki sounds like a better way to celebrate Thanksgiving!

The “simple round dry skewers” is what we use in Malaysia. It burns fast yes but the workaround is to soak it in water for a while. Problem solved.

Used to get frozen boneless turkeys at a defense contractor job as a bonus in early November, they were only 10- 12 pounds, so a lot of coworkers would give or trade them to me in exchange for cooking them later at home on a grill. I'd make them all thru Nov,Jan and Feb and get them sliced by a friend's rotary slicer. Made all kinds of brines and rubs, jerk seasoned, old bay, various bbq sauces and smoking. I think I did approx 20 different styles in 7 years. NOW I have to try THIS !

I've seen some of the BA cooks use the microplane upside down so the zest stays in the "bowl" of the grater, then they just dump it out when they have enough.

A tip for everyone from the restaurant world. Use stainless steel bowls for prep and never glass.

Some other cuts you also will find in yakitori are breast cartilage, wing tips, gizzard, heart, liver, and neck. If you aren't too squimish and are adventurous give those a try. Probably the tastiest parts of the whole bird :)

"Tori" just means bird, and "Yaki"=grilled, so "yakitori"=grilled bird, so it's still accurate
