Les, one thing I’d love to see you consider, is using your trim for burgers and excess bones for beef stock, which you already use for your braises. I started making my own bone broth a few years ago and I can’t go back. True horn to hoof cooking utilizing all of the animal. Love the content brother, keep it Texas!

Thanks for this. I'd personally use a boning knife to save some more of the meat you cut off with the fat but that's just me. The fat can be frozen then in a large pot it can be rendered into tallow for use in deep frying or whatever you use oil or butter for. Its not difficult at all.
