Our family butchered our first steer a few days ago. We are on a mission to use as much of the animals as possible. So today we are eating the beef heart.

That looked delicious. We sort of made a tradition of eating liver the night we butchered. Watching this makes me want to again be on a farm where we raise our own food. The baby's expression was priceless.

Tongue taco's are amazing. Slow cook for 8 to 12 hours, pull off outer skin layer then shred add your favorite seasonings.

Good deal! How did you like them? I think the texture was like a moist roast beef, also I was excited to see how much meat is actually in tongue.(I know tongue is all meat and no bone) but it was surprising for sure. Waste not, want not!

You can also cook the tongue and heart in a pressure cooker with onion and bay leaves for the same result and less time. Even less time if you use an instant pot -) Best tacos EVER with fresh cilantro, onion and tomatillo sauce (boil tomatillos and 3 large dried anaheim/ancho/guahillo peppers then add garlic and salt to taste in a blender and let run for a little bit to get to your desired consistency)!

The information of how healthy organ meat is. That is what changed my diet to eating organ meat. I was amazed at the energy that Liver gives you after consuming ❤️❤️❤️

Ox tails are also great to instant pot and then tear the meat off and make carnitas tacos out of them as well. As far as heart goes, it's pretty much similar from animal to animal if you think about it. Every creatures heart muscle is going to be made out of smooth muscle fibers density packed together. Of course there may be fat on the heart muscle somewhere to differing degrees but slice into it and the meat is always extremely lean. Beautiful and perfect for a person on a low fat diet that needs the protein. Plus, an extra benefit is it's loaded with iron as well. Happy eating y'all! Love ya! Rock

I love beef heart burgers. I cut it into cubes and process it in the food processor with cut up raw bacon.

This is the way it shold be nothing wasted.We like to corn the tongue it turns out like tender corned beef. Another way to do heart is to slice it up thin and stirfry it with veggies. great job folks!!!

Beef heart is a wonderful cut of meat. We Polish people call it the farmers prime rib. Suggestion... Do a fast sear on very high heat and then fry it like you normally do. Serve with fried potatoes with onions and with fresh buttered rye bread.

A friend of mine buys beef heart regularly from the butchers. She cuts the top off then cuts all the sinewy pieces out with scissors. Stuffs it with sage and onion stuffing covers it in foil then roasts it slowly for a couple of hours. It's absolutely beautiful. Years ago we used to buy sliced ox tongue from the deli but I've not lived in the UK for 18 years now so I don't know if they still do it. You can also fry the brain and eat in, I've personally not done that but I've been told it really good. Glad you enjoyed it.

nice to see you again. when we were young we used to have stuffed heart. Remove any nasty bits and then stuff with sage and onion stuffing. Then sew up the opening. Server sliced with a roast dinner. yum.

Beef tongue is one of my favorite delicacies and has been since I was a child. I remember watching my grandmother blanch it and then peel the skin before further boiling or braising for hours until it was finally ready. She actually made several at a time because we wanted lots of leftovers for both hot and cold sandwiches for the next couple of days.

I am 67 yrs old I grew up eating many of the parts heart is one of my favorites as it is a smooth muscle I find it tender and flavorful.i also like liver . I have eaten tripe,tongue not for me but a good steak and kidney pie oh yeah. I eat the liver and heart of the rabbits I raise and eat. I grew up in England. Ox tail soup is great

Rabbit liver is the only kind I eat. It doesn’t taste “Livery” at all. Delicious!

where your parents from the ww2 era with all the rations? I think that makes a difference in what you were raised eating and if you like organ meats dont you?

We tried beef heart for the first time not long ago. I'm not much on offal in general but did enjoy the heart. Joyful reminded me of my kid when she was 5 or 6 telling me she was not going to eat chicken any more. I asked her why and she said "because if we eat all the chickens the farmers won't have any anymore." I managed not to laugh and told her the farmers grow them for us to eat and if we quit eating them they would not have a reason to grow them any more (I didn't complicate things by talking about eggs, LOL.) She then happily said Ooh, OK and served herself some chicken.

Lol! I'm with Joyful. I just keep seeing Brownie in my mind's eye. Nothing against it for other people, but I find myself less interested in eating animals as I enter my golden years. ;-)

when I was a kid we had beef tongue sandwiches with mayo and i loved it. I think they call certain organs from the animals i.e. cows, sheep sweetbreads. I have never eaten beef heart but I have eaten the heart from a Chicken and also their gizzards. I am not a full blown vegetarian as I still eat fish and eggs but once in a great while I eat chicken meat. I will never eat beef again but this has nothing to do with Brownie. I lost my taste for beef over 10 yrs ago.

A good majority of people when they age, will have less desire for eating meat. It is a natural occurrence. It is because as you age your body needs less protein for developing a growing body.

I've had beef tongue before. It was sliced thin and fried. DEEEELICIOUS! Its like a delicacy! Makes good sandwiches the next day too!

I have it too, back in the day when schools had cooking class, my teacher took it to the butcher and had cut the taste buds off and into chucks, we had fondue, and my teacher cooked it, then we all had to try it, and then she told us what it was. It was delicious and I had seconds...lol

As I am scottish you can imagine all the offal that I consumed as a child, the only one I found difficult was tripe. I now live in Australia and i can buy oz tongue, hearts, kidneys and liver anywhere. The tongue has been pickled here and I cook it slow in crockpot in water, onion and a bit of herb. When cooled, peel back skin to get to meat and its delicious meat for sandwiches. ♡♡

@@noneofbizorjuliejt6466 Oh lamb kidneys are a must in a Steak and Kidney Pie, they are tender and just take on the flavour of the stewed meat, but they are so high in nutrition for our bodies. I went to a restaurant once or twice that served kidneys, cooked with mushrooms in a cream sauce served on a filo pastry basket. I went home and duplicated the meal, from memory. You saute kidneys with mushrooms, you could add a golden shallot for flavour, using the pan juices, add dijon mustard, pepper and cream and you could have them on toast. Oh my mouth is watering as I write this, and I have just eaten breakfast haha!

Tongue is wonderful also. I use my pressure cooker and it comes out perfectly tender every time. Sliced, it makes great sandwiches

Heart from beef or deer etc taste perfect. You can also cure the heart , and then you get very good snacks ! Beefheart in small cubes, cooked with heavy cream,salt and pepper and potetatoes is very,very good :)

I love organs! I've never had beef heart, but I raise rabbits, chickens, & ducks and eat the hearts, it tastes a lot like roast beef.

My mother would slice the heart up and put it in a pressure cooker (the old-time kind). She would make gravy. We LOVED it. ❤️

I'm an elderly viewer that grew up on a small farm in mid Minnesota. Being eighty this year I can remember my grandparents meals cooked the meats that people don't use anymore The most used way to fix the heart was to slice open And remove the grisly veins. It was then stuffed with a dressing and tied back together and roasted. When it was done, it was sliced and served with gravey.

We have eaten heart from our beef we raised and from the deer and elk we have harvested. It’s all really good. The kiddos that didn’t try it missed out but if they didn’t want it that’s just fine. Thanks for sharing :)

You are so courageous to cook a heart of an animal that obviously meant so much to you. Perhaps the memory for the kids is too recent. They haven't had a chance to forget and detach from a beloved pet.

I'm half German Half Native American, So I appreciate what you are doing by not wasting any food. My Grandmother loves to make liver and onions and when we have the rare ability to get Kidneys we eat those too. For liver we marinate it in milk overnight, Kidneys we do the same for 2 nights and drain and refill the milk in between. It makes the organ meat taste less metallic and tenderizes it, no shoe leather cooked in my house.

In my middle school science class my teacher used pig heart as a demonstration for a lesson he was doing. Afterward he cut and fried it as you did for us to try it. It was surprisingly good. :) I’m glad you let your kids see the whole process and choose for themselves to eat the meat. If I have kids in the future I’ll probably follow after your example here. I was raised on things like heart, tongue, chicken gizzards, etc. I am 62 and when I was young tongue and heart were very reasonably priced but today they are quite expensive. Not a lot of Americans eat these parts but many immigrants do eat a lot of the animal that we don't. They don't waste. In any event heart and tongue are fantastically delicious cuts of meat and everyone should try it.

When we did 1800's re-inactments, I would get 3 or 4 beef hearts to cook over the campfire. The adults loved it! Turns out the kids did too. My daughter came to get some with the camp kids in tow. They ate it all! Parents came to find an empty pot. They were astonished that their picky eater city kids had eaten it! I put it in Dutch oven in a bit of water with chunks of onion and cooked until tender then sliced it thin for eating.

i'm 70 now but when i was really young i remember eating beef heart. my grandmother seasoned it and wrapped it in foil and baked it. to me it was like steak. as an adult i always cooked beef as it was a cheaper meat that we loved. my kids loved it too. nowadays, i cannot find beef heart in the grocery stores anymore. oxtails used to be a cheap meat and now it's hard to find and really expensive. remember when chicken wings were cheap and now the 'buffalo wing' craze upped the price of chicken wings.

Thank you for posting this, Ms. Bri. I have wondered what organ meats tastes like and how to prepare. My son was recently diagnosed with psoriasis -- I've been reading that organ meat is actually better in treating certain autoimmune disorders (like psoriasis) from a nutritional point of view.

My high school homemaking teacher taught us how to cook the organs and tongue with onions, carrots garlic and bell peppers that had been sautéed in fat in stock pot to make broth. Then Grind the meat to made a potted meat used to make sandwiches.

I am an old lady. Everybody here was a homesteaders la family farm. We ate the heart, the tongue and even the stomachs we called tripe. Tongue was my favorite.

Sautéed with onions and garlic with or without a splash of red wine. You can substitute Worcestershire or balsamic vinegar. Add some flour and water for a good smother fried dish over rice as well. The same with venison. In a pinch, mince it with a knife and cook it w/taco seasoning for some great tacos 🌮

Joyful just suddenly became vegetarian.😂😂😂 Your children are precious! When I was a child I felt the same way as Joyful. Our steer was named Taurus and one day at mid meal my mom said this is Taurus we’re eating. Well I didn’t finish and secretly went to my playhouse and cried. From then on I asked my mom who we were having for dinner. I think naming the animal puts them more in the pet category but maybe that’s just me. RIP Brownie & Taurus. 😊

None of the animal is wasted just a quick note: processors keep all that is not requested and sell to processors like the hide etc. They also sell by the pound cuts that people don’t necessarily choose to keep.

we sometimes eat animal organs. like liver, heart etc. we chopped it into small pieces for topping noodles. it's very delicious.

Yum!! I grew up with my Dad butchering our beef, pigs, chickens, rabbits deer, quail etc. We always utilized as much of the food blessings as we could. Tripe (stomach) goes into a red chili stew called Menudo and the margut or small intestine into a meat stew including the mountain oysters at branding time and brains, kidneys, liver, shanks, tail at butchering time... you get the picture. The pig head was cleaned good and simmered for hours until tender and deboned. Mixed with chilies, onion, garlic, oregano and maybe a little cumin and wrapped in cornhusks....made amazing tamales. Fried the pork skin to render the lard and then deep frying to make pork skins. The pork neck bones usually went into Pasole. The beef heart was pickled by first simmering slowly until done and tender with onions and garlic. Sliced it into lunch meat sized pieces along with onions and layered into a canning sized jar and covered with a water, salt and vinegar solution for at least 24 hours in the frig (no processing). Great sandwiches on homemade sourdough bread. Many years ago now for me but you're bringing back wonderful memories . Life styles are coming full circle with some of your generation. There are many way to cook it. When going to the store I'll have them cube it like cube steak, then bread it, thats just one way. I just got all the bones from a friend that they butchered, they butchered it fast so i got 15 roasts, 20 pounds to grind, 8 steaks. 20 quarts of broth, 50 lbs of bones for the dogs. 4 gallons of rendered tallow for soap, and 10 lbs of liver sliced and fast frozed so i can just take out what i want to use. If you roll the slices in a little flour before you fry it, it makes a crispy "skin". Super good.

Yummmm! We usually cut our hearts the other direction, in rings, from the button tip to larger and larger. But that works. I like mine dipped in flour first. Healthy meat. Yay you!

I like heart, especially beef heart. If you have reservations, grind it & add to the ground meet. It adds protein, richness &smoothes out the texture.

Joyful is absolutely adorable. I remember her remarkable answer to your question in the butchering video "Is it exciting or is it interesting?". "It's sad", she replied. What a strong personality. But on the other hand, beef heart must be delicious. I wouldn't save the brain, either. Creutzfeldt-Jakob disease scandal took my appetite away.

I have eaten heart since I was just a little girl. Since then, it has become our family's tradition to eat the heart the day of, or the day after we harvest the animal. This includes the animals we hunt. Love venison heart! (Well, if it's still intact after the hunt 😊). 🌲🦌🌲

Thanks for sharing and taking us along with you to eat beef heart for the first time. Interesting. It looked great after it was cooked. We have not had it before. We don’t eat much meat but will consider trying it after watching you guys.

I know this is late but I eat venison heart when I get a deer. We do it a bit differently first of all we slice it the other way leaving circles of meat. We coat the meat in flour and partially cook by frying them finish by baking in the oven. We like it so much we ask for hearts from friends that do not eat it.

I was raised to grind the heart and use a ground beef. We always enjoyed and it is super healthy. I truly enjoy lengua taco! We also slow braised the tongue and then refrigerated. When cool we would take off the outer membrane and then slice really thin for sandwiches. YUM!

Mom always pickled the heart and tongue. I don't have her recipe but I know it had salt, vinegar, peppercorns, a bay leave and I can't remember all the other things. I think there was some sugar in there too but it wasn't sweet. Loved it!

Where I come from (south French country) we eat and use 99% of the animal we raise. Nothing is wasted, and it makes us proud to raise animals The heart beef is delicious when marinated in Porto one day in advance and then grilled in butter like you did

I grew up eating cow heart, cow tongue, stomach lining, and everything else and love it. When you cook the tongue boil it till very tender or it will be chewy and you dont want that. Season the water how you like, once done cut up in small squares and it in tacos...yum!!!

I fixed beef heart once. I read that it could be stuffed with dressing ,tied shut and roasted. Yes I cut the veins and course stuff out as well. . it turned out really good. Tongue I fixed by boiling to get it ready to be pealed. Then roasted and sliced to serve. It will be interesting to see how you like these cuts.

With a German mother, even though it wasn’t our animal, I had beef tongue and beef kidney growing up. I love chicken livers, hearts and gizzards. Looks yummy!

Hi Art and Bri !!! I am from the Philippines and I just want to share with you a recipe that we use in cooking the Beef/Ox Tongue... We call it "Lengua Estofado". Beef tongue is one of the expensive part of a cow, since you can only harvest just one from each cow. This recipe is one we use during the holidays or in some special occasions...We use in this recipe (just for one tongue) a tall can of Campbell Mushroom Soup, a can of 29 oz. Del Monte whole kernel corn ( don't discard the water in it) , a small can of Nestle Cream, a bag of fresh botton mushrooms slices, one white onion chopped, garlic crushed, salt and pepper and a teaspoon of tumeric powder (optional). First we boil the tongue for at least 3 hrs in high heat then medium and then we remove the skin, slice it circular together with the other meat attached then set aside... meanwhile in a large sauce pot we heat about 2 tablespoon veg. oil : saute onions and garlic in medium heat then we now add all the sliced tongue and other meat, Stir then add the mushroom soup sauce and the whole can of corn kernel with the water in it, add a tablespoon of maggi beef broth, season with salt and pepper and the tumeric powder for about 5 mins. then we add the sliced botton mushrooms, continue cooking until mushrooms are cooked. Simmer until the tongue is tender then add the nestle cream continue cooking for a few minutes then done. Taste and season as you like... I hope you like it. You can also stew the tongue with tomato sauce, etc. Happy Eating, Von Appetite !!!

Brown the oxtail and braise it like stewbones until tender. It has more use as food than broth. A West Indian staple food it’s marinated in seasoning and cooked in a braise served with coconut rice and bean. Cook the tongue in a onion beef broth until just tender or more. Peel the skin layer off of it and it’s just like a pot roast. Both cuts are very beefy flavors. These offal cuts are very expensive in certain markets. One beef tongue can be over $20.00 and oxtail is over $45 a case of prepared meat.

My Mom used to stuff the heart and roast it like Turkey or chicken. I think the slow cooking gave it a wonderful taste. Tongue makes a wonderful sandwich meat.

My mother used to cook lamb hearts and beef hearts should make us bread stuffing cut off the veins and stuffing with bread stuffing and bake them I'm 76 and I still remember how good they were and they weren't slick God bless you all

I have not had beef heart in years but my Mother did cook them when I was a kid growing up. I love beef tongue sandwiches with mustard and horseradish on rye bread. That is one of my favorite meats. My Mother also cooked beef liver and onions about once a week when I was growing up and I do not eat it today. I baked Angel Food cakes when I was a Junior and Senior in high school and I always made them with duck eggs and they were always good.

Use a pressure cooker to cook the tongue then you can fry it or cut it up in small cubes and put in soups. Beef heart is also great in Mexican or South American anticuchoes. They are made with beef heart and grilled on skewers. Organ meat is wonderful.

Don't worry about eating the all body's animal, actually in most of the world outside US, we eat all animal parts, except hair... Because all other parts are eatable. Even the cartilages of some animals are eaten too, like pork ears. Not everyone is so wealth for select only the big pieces of muscle of the animals and discard the rest of the body. And even if we can afford to buy only lean muscle, there are lots of very delicious dishes made of all parts of the animals: tongue, head, gut, liver, feet, balls, skin, everything! Enjoy your meal and honor this precious cow who is feeding you. Cheers from Mexico 😊

I love beef tongue. I cook it in the pressure cooker, peel the tongue, slice it and eat it warm or cold with apple cider vinegar. Not a fan of heart.

Great video. Enjoyed seeing the kids knowing the source and working out how they felt about eating it. Personally I enjoy beef heart and liver. I like liver with a savory side dish and some seasoning. Heart makes a great sandwich meat. My mom was raised on a depression era mid-west farm and I learned to enjoy those things from her. First beef tongue taste was in a loose meat taco from a food vendor truck and I was amazed at how good it was.

We celebrated my little brother’s birthday with my family in Mexico and butchered a pig. After the processing, Abuelo Pepe took the pig heart and threw it in the fryer alongside the other bits to make chicharonnes. It was super interesting to see that heart come out a deep golden brown but still retain its shape, valves and all. Beef tripe, especially honeycomb tripe, is used in other Mexican dishes such as menudo. The tripe is cleaned, scalded, and cleaned again, before diced and thrown into a stock pot filled with a heavily spiced broth. You gotta cook it for hours and cooking tripe does not produce a pleasant smell, so when we prepare menudo, we cook it outside. The tripe eventually looses its tough and weird taste and becomes tender and sweet. Serve piled with finely chopped onion, radish, cilantro and a wedge of lime. Oh, and don’t forget the tortillas! Menudo is my favorite beef dish. I know eating cow tripe is weird but Mami would only be able to afford it maybe once a month and the restaurants only sold it on Sundays. Menudo was my rare, Sunday treat :3 I guess how ice cream is for kids or some other sweet. Lol, mine was cow tripe soup! Cow tongue? Cow tongue tacos! My dad’s favorite, with cilantro, lime, and onions.
