You should use a Bolillo bread if you don't have Pan Francés to make the recipe more authentic.

This is awesome, but I would definitely use a slightly toasted cibatta bread instead. It reminds me of the great sandwiches that I had at 'La Lucha' in Lima, Peru. Thanks and keep the good work.

Thank you Adolfo! We tried ciabatta and it was really good and then tried the brioche bun and the sweetness contrasted the acidity and spiciness really well!
