I dont have chickens or any animals to feed my zucchini scraps to when I peel them, so I take the extra step to make sure they are very clean and no blemishes. I then take the peels and use them in a saute for dinner. I've also frozen them to use later. They can still be baked into breads, muffins, or pancakes. I've used them chopped up in veggie lasagnas as a layer. Also great in a fresh salad, as I can't eat lettuce, so use lots of veggies to create salads for myself.

Today’s video was extra special. You reminded me so much of my sweet little mother. She would grow it, can it, bake it and cook it. That cake would have been something she would have loved. With tea. And for sure she would have made that mock pineapple. Thank you very much, Kelsey. You’re the best.
Love your recipes. If you have the joy of cooking cookbook your pineapple would work great in the sweat and sour pork chops. I modify and use boneless pork chops basically it's pineapple,onion vinegar, brown sugar, Worcestershire sauce, soy sauce, pepper. I cook it in my slow cooker and add more peppers and onions part way threw also a little more pineapple. Also use the pine apple juice in it and chicken broth. Goes great over rice.
Yumm that cake brought back so many memories!I I used to eat one very similar called gâteau Picotine. It was made with a can of fruit cocktail, other than that same recipe. I am not a canner but now I feel like trying this mock recipe 😊

The cake looked amazing! I'm definitely going to try it. I've made the mock pineapple before but mine is in shreds. One easy dessert I make with mine is I mix a jar of the mock pineapple with a can of cherry pie filling and put in bottom of baking dish (I think 8 X 11 dish), then I take a yellow cake mix and only sprinkle half of it all over the top. Then I take one stick of butter and slice it and put all over the top of it and bake. SO GOOD! I've never tried it cooking the way you did the chicken, but I may have to give that a try.
@@seedandsparrowhomestead I realized I just said canned cherries and not cherry pie filling so I corrected that. It is very good and such an easy one to put together if you need to take something somewhere. I've taken it many times to church potlucks.
Thank you so much for including your recipes for using the canned mock pineapple. I've only made desserts with pineapple before (good ones) but wanted to make savory dishes also. This was a big help and your cake was SOOOOO easy to make!

While you used your overabundance of zucchini/squash, you need to factor in the cost of the sugar, lemon juice and pineapple juice. Still better and healthier than commercially canned.
