Some guidelines : 1. Depends to a large extent on storage conditions - I normally refrigerate peppers within two hours of cooking. 2. To maximize the shelf life of cooked peppers (safety and quality considerations), I refrigerate the peppers in shallow airtight containers or resealable plastic bags. That way if you should not get to use them and they go off, you don't lose the whole lot. 3. If stored properly, normally it's 3 to 5 days. If a lot of opening the fridge is your household's activity because of more household persons doing this, and especially in warmer climates or summer : check if you should start using them around the 3rd day. 4. You can actually extend their life by freezing - pack the amount you require for use of whatever recipe you need each time, without wastage or having to use them all at once after thawing. Freezer tips : Cooked peppers that have been kept constantly frozen at 0°F will keep safe indefinitely. If you thaw them first in the fridge, they can be kept for an additional 3 to 4 days in the refrigerator before cooking; peppers that were thawed in the microwave or in cold water should be eaten immediately.
