Today we will cook the Greek tzatziki sauce - light, refreshing and spring.
We rub the cucumber on a coarse grater and squeeze the juice slightly.
We cut the greens finely.
We combine yogurt with cucumber, olive oil and greens.
Mix thoroughly. If the yogurt is not thick enough, then it needs to be weighed off
in gauze a day before the sauce is cooked. We add crushed garlic,
Add salt and pepper to taste.
If desired, add lemon juice.
The sauce's ready. We transfer it to a jar and store it in the refrigerator for no more than a week.
Tzatziki sauce fits perfectly with meat and fish dishes and is good simply with bread.
