That's right folks... making healthy food at home can be cheap, easy, and obviously also beautifully delicious. The real goal here is just using some very basic technique and you'll have arguably one of the best feel-good homemade meals of your life.

Ingredients you'll need:
Shakshuka-
28 oz Can crushed tomatoes
3 tablespoons (42g) butter
1 bell pepper
1 onion
4 cloves garlic
6 eggs
1tsp ground 2g cumin
1 teaspoon 2g sweet paprika
1/2 teaspoon (1g) cayenne
Salt pepper to taste
Optional cilantro for garnish
Whole grain toast for serving
Peanut Pork-
1lb pork cut into 1/2 inch pieces (3.50)
2 (28g) tablespoons neutral-tasting oil
1 bunch green onion, sliced
1 Fresno or serrano chili, finely chopped
4 celery ribs, diced
1/3 cup 55g roasted peanuts
1/4 cup (60ml) soy sauce
2 tablespoons (30ml) rice vinegar
1 teaspoon (6g) sugar
5 cloves garlic
2inch knob ginger
2.5 teaspoons 7g corn starch
Fresh chopped and Cilantro for garnish
steamed rice or cauliflower rice for serving
Glazed Meatballs-
The sauce-
3/4 cup 190g ketchup
2 tablespoons 35g honey
2 tablespoons (30ml) soy sauce
3 tablespoons (45ml) Worcestershire sauce optional
For the balls-
1lb ground chicken
3 garlic cloves finely grated
2 green onions
1 small egg
Salt and pepper to taste
For the Veg-
1 bunch kale
4 cloves garlic
1.5 tablespoons extra virgin olive oil
Lemon juice to taste

I appreciate you keep prices realistic, or even somewhat higher then what a price conscious buyer would spend. There are so many video's naming a price and putting down unrealistically low prices, or adding a rib-eye but not count it "because I already had that in the fridge". Love the videos because of the recipe's too, btw.

I disagree, why the hell are the prices in the form of per serving? I'm not going to the store to buy each ingredient in 1g every time for each meal. I'm buying the whole bag. You know? So now I gotta convert how much its ACTUALLY gonna cost.

@@sarahbarabe8470 I mean he gives both. The whole meal and the per serving. It be unreasonable to expect the cost of each Ingreduent new. Because do I do 1kg or 2kg flour? For sugar same And for spices it would look stupid expensive because the box/bottle/container is always very expensive as a total but you use a mere teaspoon per dish usually

Thank you Josh! That peanut pork has become a staple weekly dinner for me. I’ll admit gathering all the ingredients was expensive at first. My kitchen had nothing, not even cooking oil. But stuff like cornstarch, rice vinegar, oil, soy sauce and all that last a pretty long time. So once I just had to get the pork and veggies, it actually became cheap to do it weekly. The more I build my kitchen, the more the daily costs go down. I am loving learning how to fit cooking into my lifestyle.

Pro broke chef tips: - get frozen and/or canned veggies, fruits, beans, etc. They're cheap, nutritious, and won't rot in 2 days (add in some fresh ones here and there as desired, but not everything in a recipe needs to be fresh) - throw any herbs, veggies, fruits, etc leftover from your recipe into the freezer. Keeping spare diced onions, peppers, tomato paste in the freezer is clutch. Same for chopped herbs frozen in olive oil in an ice cube tray. - invest in a few herbs/spices/spice mixes/sauces. With a few good'ns, you can turn basic, repetitive food items into a diverse rainbow of dishes. - hit up the international food marts. They got all the best and cheapest spices, sauces, etc (also, canned coconut milk for cheap - great for making healthier creamy dishes). Also a great chance to add one or two new food items to make your meals more exciting for cheap. - when in doubt, beans and rice FTW. Use diff beans and spices to make diff style dishes (chili, Southern red beans n rice, Spanish black beans n rice, Indian chick peas n rice, etc etc). **Pro tip:** Don't just spice your beans! Add spices and a dash of oil to your rice while it cooks👌 Who else has some broke chef tips?

If there's a food bank in your area, don't be afraid to get some canned goods from them. Sometimes they have fresh veggies too!

Love these tips! One of my favorites is to save vegetable scraps in the freezer to make your own stock. It gives you control over the flavor while reducing the amount of waste and saving you money on purchasing broth. Another of my favorites is canning - by learning how to do this, I’ve been able to save money by just making what I’d typically buy. Just do a lot of research to make sure you have enough acid in the content you’re canning!

My first bach pad I lived in after college: Spoke alarm would go off when cooking damn near anything on the stove. The one time there was an actual fire and the house filled with smoke... it did not.

The problem with these is that it's is not healthy food at all. Maybe in comparison with the crap some people usually eat. To be clear, first meal the starts of with a huge amount of butter and serves it on regular BREAD which is like the Nr. 1 thing people don't know is VERY unhealthy. Second meal has pork in it which is literally one of the most unhealthy meat's out there. You can tell he doesn't really have a clue what is healthy and whats not so videos like this are actually quite dangerous imo. But again, in comparison what most people usually eat, this might be "healthy" but any nutritionist would tell you these aren't healthy.

I’ve made this every week for the past two months. We sometimes use chicken, tofu, steak or even mushrooms in place if the pork, but it’s always so damn good. A bit of prep, but quick to make once it’s prepped.

What I love about these recipes is that a lot of the sauces and spices used are stuff that I generally have in my fridge and cupboard (since sauces and spices are always good to have on hand for flavour), which if you’re someone who already has the sauces and spices and maybe some of the fresh ingredients it makes this even cheaper

i made the chicken meat balls with kale, added rice to the meal, so good! i totally forgot the yogurt sauce until my last bite, and wow did it make such a difference! like the meal was already good, but the yogurt made it even better! thank you for these recipes!

I tried the glazed chicken meatballs recipe, and it was DELICIOUS! I didn’t have Worcestershire sauce so I replaced it with Balsamic vinegar (I didn’t use the same amount though since the vinegar is so strong. I added two TBSPs instead of three) and a squeeze of lemon. I only made the meatballs and replaced the kale thing with a lettuce salad! The whole family liked the dish so much!

What makes the butter not kosher? You can cook eggs with butter. Also there are no meat produces in shakshuka, but olive oil is more tradition than butter when making shakshuka.

The problem with people suggesting meals like this and complaining about how healthy meals can taste good and be cheap is. Thats not how you buy stuff, especially if you're poor and aren't able to afford to go out much. I grew up poor, my mom would only go to the store once after being paid to avoid gas/cab costs. Some vegetables are really cheap, but having everyhting to make a meal that "tastes great" is a bit harder. You don't live by days, you live for the week or two week period. You dont buy 2 cloves of garlic, a pinch of powder, half a tomato, etc. You buy the greatest *amount* for the best price. Which means to people like my family growing up, buying all those fresh ingredients makes things much harder. Because you need many of them to make a cohesive meal. Whereas, frozen chicken tenders and fries, you can make and eat on their own, and they still taste good. To most people, a carrot on its own does not taste good. Not complaining about the meals though, those look great, and now that Im in an okay-ish spot Im down for trying some.

Let me start by saying, I completely understand that the struggle is real, and what you can do to make food healthy on a budget is pretty restrictive. The things I'm going to mention are here were meals I would have 4 if not 5 days out of the week. While they taste good, are healthy, and are fairly cheap, I ate them that much because they were some of my only cheap options. So I didn't grow up poor, however I was poor af for a solid 5 years after college. The nice thing about garlic, is that you can buy the bulk bag of like 15 heads of garlic that will last months, or if that's too much, the jar. While it won't be as good, it will work. The pork and rice was actually one of my go to's. Thin sliced pork chops are one of the cheapest things in the meat section and they're pretty lean. You can get a 20 lb bag of rice for cheap and it will never go bad. If you're like me, breakfast is super easy because I love eggs, and they are super filling but also very lean. I honestly found that the healthiest meals tended to be the cheapest for me as well. That $1.80 can of tomatoes was the expensive brand. While San Marzano tomatoes make the best sauces, you can go cheaper with Hunt's or whatever cheap brand there is, or even get crushed tomatoes to go even cheaper. Making your own bread is also cheap and easy, if you really need to save. As for produce: anything that isn't leafy of a bell pepper will last you 2-4 weeks. So you can buy most in bulk without fear of it spoiling. And as someone that still eats frozen chicken tenders and fries to this day, while the fries are cheap, the chicken tenders could be cheaper, and a lot of the meals I cook now are still cheaper than that. So I agree with both of you. I think he's right in showing that you can eat healthy on a budget, but it's very possible he doesn't completely understand the struggle and restrictiveness. The majority of what I ate when I was at my lowest income, were things like this, and only like this, because not much else is available.

Yeah, I'm a theatre actress (I mean, I already live with the money I do day by day) and with the quarantine, (in Argentina we've been quarantined for 7 months and counting) and I've been living on rice with soy sauce and garlic, rice with fried egg and pepper, rice on veggie stock, and so on

I agree but also disagree. I also grew up poor so these dishes at $2-$4/ serving sound very expensive. Everyone circumstances are different. For my family we never buy frozen chicken tenders or fries because they are expensive for our budget. Everything was homemade and dishes are kept simple. I think simple cheap dishes can be more healthy than those package frozen food, but people don’t want to eat simple food. So that’s why those package food you mention is more preferred base on a flavor per dollar ratio. If we talk about just healthy food per dollar ratio it still cheaper to make your own if you’re super poor and on budget. Growing up most of my food are cheap grains like rice and lentils, potato, some meat and some affordable veggie like broccoli, cabbage and carrot. No cheese or even soda bc they are expensive. If you think about it junk food more expensive just for the fact that u eat them. If u don’t then u can save that money to spend on other groceries. Just wanting to say from another perspective. The dishes here are inspiring but I wouldn’t say they are cheap, they are moderately affordable if you make an average income. That just my opinion.

I know what you mean and agree. The average was $7 a day and that if you have the time to do all of this and can pay out of pocket more than $7 a day because you're right, you dont buy spices by the pinch. I've been there and I know spending I can't remember like 1.50 on one bell pepper is not how to spend money on food. Its a perishable and expensive for very little filling or calories. Idk it seems like a thing on youtube for people to make videos on how to live cheap when its not how to live cheap.

Hard mode for real would doing this with chard, and having to figure out when that chard is just just seared chard and when said chard becomes charred chard but not quite burnt charred chard. Extreme mode is to add asofoetida resin, then you have to monitor the shards in the chard and know when it's all cooked so you have charred chard but no charred shard in the hing shard charred chard.

I love cooking asian food because it meets 3 out of the 4 of my food criteria: -healthy -savory -doesn't contain dairy (I'm semi-severely lactose intolerant) -cheap (if you live near an Asian supermarket, otherwise the ingredients can be expensive.) Unfortunately I don't live near an Asian supermarket so it doesn't meet the last of my four critieria. I cook it when I can.

I had a really good set of meals with $3 chuck eye and $3 butterflied flank steaks this weekend. Slice and marinate an hour in spicy stuff, sear the shit out of it, serve in omlets or on rice or veggies or whatever your persuasion is there. With a little care to trim the harder fat on the chuck eye there's also no reason you couldn't treat it like a nice ribeye on the grill either. Theres some great deals to be had with those, flanks, various roasts, and beef/pork neck. Don't be scared of getting beef or pork neck bones, they cook wonderfully in stews, curries, chillis and tend to be dirt cheap. Hell even with chicken, sometimes the preseasoned bone in quarters and thighs can be had around me for less than $1 a pound and they go straight on the grill and into meal prep containers. For pork, ya can't go wrong with a couple cheap pork shoulders to smoke for 4-5 hours and oven finish overnight for cheap and easy pulled pork.

If you have a kitchen mixer (Like one of those Kitchen Aide mixers for cakes), the $200 meat grinder attachment is 10,000% worth the price. (Or if you have a Cabela's, Gander Mountain, etc. near you.. $150 countertop meat grinder.) Hamburger = $4.99/lbs Sirloin Top Round constantly goes on sale for $3.49/lbs. $1.50/lbs savings, and you just buy as much as you can afford.. grind it up with as much or as little fat as you want, and portion it out to 1 lbs freezer bags, and you have *better quality* hamburger for as long as you want. Ground pork = $2.99/lbs or more. Pork shoulder = constantly going on sale for $0.99/lbs.

@@Dakarn True. However I've also had excellent luck by taking a couple pork shoulders or chuck roasts or whatever large cheap cut of meat and asking the butcher staff to grind it for me. There was no extra markup or anything and it was fresh ground.

When I was little my dad was trying to incorporate kale into his diet but he hated it, so he developed a dish we affectionately call Mish Mash. Mish Mash is basically ground beef, kale, some seasonings, lime juice, and salt. It was a super cheap and pretty good tasting way for him to incorporate more kale into his diet.

Interesting--my dad also dislikes kale but eats it for the great nutritional value, and I found that if I sautée it in butter or olive oil with several minced cloves of garlic and some salt and pepper--essentially cooking it in garlic butter--he likes it fine.

While i love the ideas here. I can say these aren't cheap. A person needing to buy these products will spend more then 20. You can't buy seasons by the teaspoon or tablespoon. You should try a money challenge. Like eat for 5 days on 30 bucks. That would be a way to truly gauge affordable and healthy meals.

You can actually buy spices in small quantities if you go to a bulk food store that sells spices. You could literally just get a tsp or tbsp if you wanted. I go to Bulk Barn (not sure if they have it outside Canada) when I need spices for just one recipe I'll never use again or I'm trying it out. That being said depending on the spice you may end up spending more eventually in the long run if you are going to use the spice very often. I do generally agree with your point, but just pointing it out as an option. The best thing would probably be for someone on a very tight budget would be to focus on very flavorful but also versatile spices that they can use in multiple dishes. Don't buy them all at once. Buy them here and there when on sale or you have a little extra cash. Realistically someone may have to eat more blandly at first and then they can use recipes like this once they have a little bit of stock in the pantry. Another tip is to try the ethnic aisles or groceries stores for spices. I can usually get a much larger bag of spices for cheaper than the "regular" spice aisle. You might not be able to find every spice there but you can find a lot of basic, common spices and then ones unique to that culture.

i blame the algorithm on the fact that i have never seen this video before until i started watching health related videos. i just started counting calories and paying attention to nutrition to try to lose weight (down 11lbs so far!) and i had no idea that josh had lost 100lbs in the past! been a long time fan, and i love that josh is living proof that you can still have food as a passion while having gone through a weight loss journey and continuing to work to maintain a healthy weight.

@@zacmurphy9995 In comparison to other veggies all peppers (other than green) are usually priced at like $3+ for a single pepper, while a whole ass celery stalk would be $1.99, a cucumber $0.99, tomatoes at $0.99/lb, and that pepper is usually only for one meal while those other veggies can be used for multiple. That's how it is in Canada anyways 😔

And hell yes I def agree. Buying a small bottle of Worcestershire sauce, rice vinegar and other unique sauces can be very pricey for a student especially when most fast and cheap meals wouldn't require you to use those things on an every meal basis. Its almost a waste. When I was in school like 8 years ago, the cheapest thing you can stretch for a while is rice, mixed frozen veggies and a few things to flavor it with hot dog as a primary meat, or sub the rice for instant noodle which has its own flavorings lol. Now I'm a malfunctioning member of society and can afford the luxury of having vinegar, rice vinegar, mirin, low sodium and regular soy sauce, fish sauce and all the other sauces !

I also agree with the previous comments. A "But Healthier" series would be awesome! Many of us lack in the health department, because it so much easier to buy take out food. So a healthier version of classic take out foods, traditional meals, etc. Would be really great! 😊

I agree so hard with this, healthy meals can be so easy, and inexpensive. I lived on rice, eggs, whatever fresh veg was on sale all through college. So many other dishes can be made too. Thanks for making this video.
