Fairly recently I started looking into cooking oils, on being told by my Twitch chat that olive oil was a very poor choice for frying. And they were absolutely right. Apparently the "smoke point" is low - the point at which the oil itself burns, imparting an unpleasant taste into what you're frying. So when Jaime put olive oil in the pan I too went "oh no". I wonder if it's because most British people probably have olive oil in their kitchens? Rapeseed or peanut oil, probably not so much?

hloy shit soviet wobmle In reality it's because using vegetable oil would go against the Jamie Oliver brand of healthier dishes and olive oil has become this kind of "healthy fat" icon that's the only acceptable fat choice, regardless of whether it makes your rice taste like olives.

People often forget to differenciate between native olive oil (or any oil for that matter) and refined olive oil. You can use refined olive oil for frying or cooking with very high temperatures without facing any issues but this isnt the case for native, cold pressed oils. This is where the smoking point you mentioned becomes important since native olive oil changes its structure and loses its taste at around 180 Celsius but frying pans can reach up to 200 C. Native oils should rather be used for cold meals or after the cooking procedure is done.

I just recently rewatched this video after forgetting about Uncle Roger for a while, and I was hit with a wave of nostalgia and funny jokes. This is one of the best videos from one of the best channels in RU-vid, and I hope Mr. Nigel Ng has a very happy and prosperous life. I would also like to say that I have never even seen chili jam, much less tasted it, and I have made fried rice several times, hopefully the right way.

Gordon Ramsay is another person for sure, they've never heard of Garlic Oil, Avocado oil, Coconut oil, Bacon Fat or some good Talo Fat? There's so many other oils that can help with certain meals especially bringing out other flavors and what not. I have never once used olive oil in my life.

Yeah as a former chef (changed professions years ago due to the stress), I've quickly realized a huge number of celebrity chefs genuinely are terrible at cooking. He may know how to run a restaurant but it's more than likely the cooks he hires who actually know what they're doing.

@@shadownyx6036 Only thing "chilli" I can think of to throw inside fried rice is: 1) chili oil 2) chili flake 3) chili paste 4) really specific chili sauce Unless "chili jam" is literally Thai-style sweet chili, even then you don't YEET that into your rice while it's still in the wok though. :V

The only time you "cook" spring onions if you even wanna call it cooking is in say a quiche. Add them into the egg mixture or what I've done is 3/4 cook the quiche without cheese, pull it out quickly, top it with spring and white onions chopped, tomatoes and layer on cheese(s) then put back in for 10mins. The cheese melts all over the egg meat mixture and the vegetables on top crisp up and the onions should've cooked only barely as the cheese sorta stops them from cooking fully.

It's for others to make, not the version he would make with the time and ingredients he would prefer to use the most. Hell, Alton Brown has used box cake mix on his show before, and he's probably the most intelligent chef the Food Network has ever had.
