Acidity in coffee. This is probably one of the most important aspect of coffee! I feel that acidity is what makes the coffee interesting. If we take an example of any fruit let's say mangoes, it tastes the best when it is at the point where it has the acidity and the sweetness. However, it doesn't really taste great either when it's too ripe(when there just seems to be a lot of sweetness) or when it hasn't become sweet enough. That's the reason a balance is important. However, instead of balancing the acidity with the bitterness, it should be the sweetness that should actually balance the acidity to give the best cup!

Why do many renowned brands still use dark roasted coffee? Is it because they are adamant to change to light roasts where Indian coffee industry is moving (to lighter and more delicate notes in light roasts) as per your first part of this video?

1. easy to replicate 2. dark is less complex as its only 1 flavour- burnt /dc / bold 3. medium / light is something that is super complex and tough to handle

Very interesting video and totally on point. It will be interesting to hear your point if we have an "over roasted" coffee, can we bring back some acidity by changing our brew method and recipe?

Depends on how roasted the coffee tastes. Of course, we can do the usual things like coarsening up the grind or lowering the water temperature but also switching to a more concentrated ratio in a pour over brew probably like a 1:11 or 12. If the coffee still tastes bitter, try changing the water the number of pours that you're doing. And if still nothing, there's nothing you could do.

@@atharvadeuskar Lol, that is good answer. I was thinking of lowering temp, coarsening the grind. But thanks to your input, I will also try to change the ratio of 1:12. I usually do a 1:16 for really good light roasts.

@@KrishnenduKes Yes. Changing the ratio can do wonders. Keep an eye out on the number of pours and the overall pouring structure as well!

@@atharvadeuskar I was thinking of doing a minute long 1:4 bloom and one more pour to finish it off after the bloom. What say?
