Four Roses is an iconic distillery producing some of the world's most sought after bourbon. Their limited edition bottlings and many of their single barrel bottlings that gain notoriety trade on the secondary for many times their retail value. The head of production is the Master Distiller Brent Elliott. What makes Four Roses different is that they have two mashbills and five different yeast strains that produce 10 different bourbon recipes. Brent is arguably the world most experienced expert when it comes to yeast's impact on the flavor of bourbon. Yeast is a tricky little organism that loves to mutate, which is terrible if you are trying to maintain consistency of flavor. Every whiskey nerd has a drive to understand why our whiskey tastes the way it does. This short but information packed episode is a must watch for every whiskey enthusiast.

I tasted 9 of the 10 prior to filming. There is a little hidden nugget in this episode associated with getting to know the 10 recipes. When asked why they only release the single barrel from one yeast strain and one mash bill he said the purpose of the single barrel is to showcase what maturation and the barrel do to influence flavor. With this in mind they purposefully only manipulate that one variable. He also said they need the 10 recipes to be able to blend to a consistent profile. These two tidbits of information reveal that that there is massive variance from barrel to barrel that are NOT associated with mash bill or yeast. This is why when people make a big deal about which recipes they like and which ones they hate it seems a little bit unlikely. Even the master distiller need the variance of recipes to maintain consistence, so how could a consumer be that good at distinguishing between the different recipes.

Always learning something new on this channel, Thx Randy. I just had my first bottle of Four Roses after this video. Got a bottle of the single barrel (now I need a second bottle from a different barrel to do some comparison). Great video, great info, thanks for what you do.

Make sure the second bottle is the same recipe so that the only difference is the barrel. That would be a fun side by side.

These production interviews always make me crave beer. I would love to try distiller's beer! Time to brew my milk stout I guess. 🤘🥃

Most distilleries would let you taste before covid. It is totally stupid that they won't let you know because there is no way for covid to make it through a still. Smaller places will still let you. If it is a new batch, day one or two, it tastes like oatmeal. If it is a batch that is almost finished it doesn't have any sugar in it and it doesn't taste like much.

@@BourbonRealTalk interesting that it doesn't taste like much. I would expect it to taste like sweet, flat (uncarbonated) beer. Must be the majority corn that makes it somewhat flavorless. Man, now I want to brew a batch of distiller's beer for the hell of it!!

I homebrew so I understand fermentation. Perhaps the whole beer making process is different for the two and I need to read up on it. Thanks, buddy!

@@alanpawlowski1202 I don't understanding fermentation. I have been told that different yeast trains die at different alcohol %. My guess is that if you are used to tasting the fermentation from a beer brew and it tasting sweet and I am used to tasting distiller's beer and it isn't sweet, that distiller's yeast converts all the sugar and brewers yeast can be selected to leave some residual sugars for flavor, but that is just a guess.

It’s likely different for aged spirits because of the interaction with the barrel, but for beer, I’d wager that 50-60% of the flavor profile comes from fermentation; more for some styles.
