Discussing 3 large sets in 1 video is a bad idea because there is no comparison other than the theme and the video will be also much too long. I will discuss them separately, but two sets are not yet complete and I am still waiting for some parts that I ordered. I will discuss one set this week.

That is certainly an option. Individual sets are often not worth much, unless very exceptionally, because you can often simply build 80 percent of the sets, especially the old ones, using an online manual and basic bricks. I actually only collect sets with box and manual and original pieces. The value is often in unique parts or minifigs, the baseplate, and certainly the box and manual. You can also soak white stones for 24 hours in a mixture of water and bleach. This also removes a lot of dirt and discoloration. Soon I will post a series of 3 videos about castle sets as you could see in my short. I have the impression that the castle sets appeal more to the imagination than a town set.

Nvm, I found set 6041 online for 15 euros. Manual also found for 6 euros :/
