Hello, everyone! Today, we're going to make Tteokbokki, a typical Korean street food.
Tteokbokki in Korea is characterized by its spicy and sweet flavors, and today we're going to make it using penne rigate, which you can easily find in your kitchen.
Ingredients: 90g penne rigatoni, 2 green onions, 2 mushrooms, 1/2 onion, 5 fried tofu(yubu), vegan mozzarella cheese, 400ml water
Condiments: 1 tbsp gochujang, 1 tbsp red pepper flakes, 1 tbsp sugar, 2 tbsps oligo-fructose, 2 tbsps soy sauce, 1/2 tbsp minced garlic
1. Bring a pot of water and a bit of salt to a boil.
Once the water is boiling, add the penne rigate and boil for 4 minutes.
2. While the penne rigate is cooking, slice the green onions and mushrooms.
3. Once the penne rigate is cooked, remove and drain.
4. Bring the seasoning to a boil in a saucepan over medium heat. Add the prepared vegetables and seasonings and bring to a simmer.
5. Once it's simmered enough, add the penne rigate and simmer for another 3 minutes, then add the fried-tofu and simmer for 2 minutes.
6. You can either place the tteokbokki on the plate, throw some vegan cheese on top, and put in the microwave for 30-40 seconds, or you can melt the cheese in the oven and sprinkle on the tteokbokki.
