Vegan Teochew (Chiu Chow) Crystal Dumplings - 潮州粉果

You may have seen these vegan Teochew Crystal Dumpling 潮州粉果 (Cháo zhōu fěn guǒ) or Teochew Hoon Kuih at dim sum places. They are normally served in a bamboo steamer and have translucent dumpling skin. Today, you can make them at home with the recipe below. Enjoy! :-)

Ingredients
Filling
- 3 oz [90g] firm tofu cubed
- 3 oz King Oyster mushrooms finely diced
- 3 tablespoons [40g] carrot finely chopped
- 1 stalk celery finely chopped
- 2 tablespoons water chestnut finely chopped
- 2 tablespoons preserved salted radish finely chopped
- cooking oil
- cornstarch slurry*
- 200 g Chinese chives finely chopped
- ½ cup toasted peanuts
Seasoning
- 1 tablespoon vegan oyster sauce
- 1 tablespoon soy sauce
-1 tablespoon sesame oil
-1 tablespoon ShaoXing wine optional
- dash of white pepper
Dumpling Wrapper
- 120 g wheat starch
- 70 g tapioca starch
- 30 g [2 tablespoons] sweet potato powder
- ¼ teaspoon salt
- 250 ml hot boiling water
- ½ teaspoon of neutral oil
Other Ingredients
- Shallot oil
- Hoisin sauce
- Chili sauce

Enquanto o recheio descansa, faça a massa de amido de trigo. Em uma tigela, misture o amido de trigo, a fécula de tapioca e o sal. Faça um buraco no centro e despeje a água recém-fervida. Use uma colher de metal resistente para misturar os ingredientes. A massa parecerá translúcida no início e depois ficará manchada, esbranquiçada e irregular. Depois de incorporar a água grosseiramente, acrescente o óleo (FOTO 5). Mexa primeiro com a colher e depois com as mãos (cuidado, a mistura estará relativamente quente) para trabalhar no óleo. Sove a massa até ficar branca como a neve, lisa e com textura parecida com Play-Doh

Hey there, wheat starch is tang mein, and you can get them at bakery store. :-) I believe they are available at NSK as well. :-)

Hi there, wheat starch that has less than 20ppm is considered gluten-free. You can also find gluten-free wheat starch. thanks a lot.

Hey there, if you want to skip the sweet potato, you can use add 10g to the tapioca starch. thanks!

Hi there, yes you can, potato starch is fine. You can freeze them after you steamed them. I highly recommend to consume them as soon as they are made though. thanks.

@@WoonHeng I’m little confused with the starch I bought. According to your video, tapioca starch is 木薯粉。But, the one I bought is labeled as 地瓜粉。I have even seen the tapioca starch is also labeled as 西谷米粉。I’m hoping you could help clarify all the confusion I have here. Thanks!
