Thin Sliced - SENGIRI -
It is a method of cutting to a width of about 1 to 2 mm. This cutting method is often used for vegetables that are eaten raw, such as cabbage and radishes. If you cut along the fibers of the ingredients, you can enjoy a crunchy texture.

Can you please tell me the name of knife you are using? Or link it here please? It looks like the blade is straight - not curved. When I look online they all seem curved which makes cutting more difficult. Thank you

Excellent skills.... but I'm a little leery of all the water the cabbage might retain after soaking, despite draining. Nobody wants a hot crispy tonkatsu cutlet sitting in a puddle of water....

Its takes about 30mins to drain dry. When I use a machine to cut it. I place the cabbage in a sieve then poke a few holes at the bottom to oet it drain also at a angle.

This uses a Usuba knife. Usuba knives are mainly used for cutting vegetables, and have a blade length of 20 cm(7.9 in). Thanks for watching!
