Ingredients
3 lb catfish 1" steaks
Marinade
1 tbsp fish sauce
1 clove garlic
1/2 tsp shallots
3 green onion heads
1 inch piece ginger -julienned (optional, but recommended)
Caramel sauce:
2 tsp sugar
1 tbsp canola or vegetable oil
* if you prefer a darker color, make more caramel sauce but be sure to keep the ratio of sugar and oil the same
1 cloves minced garlic
1/2 tsp minced shallots
3 tbsp fish sauce
3 tbsp sugar
1 tsp chili oil (adjust to your spice level)
1/2 can of coconut soda
Garnish:
Chopped green onions
