A Karcher window cleaner will be perfect to suck up the excess moisture from the windows (a natural dehumidifier) and then tip the water outside. It is better to be able to see the condensate rather than let this form in hidden spaces, it is not just a problem in vans, but buildings as well!
Interior dehumidifier the small plastic tubs work really well I’ve lived in caravans all my life and places like cupboards under the seating etc always get condensation unless there are blow heating running throw them all ways suffer from it u can get them plastic ones in a pack of 20 on Amazon they work really well
Condensation is a problem for many van conversions a metal box is not really ideal. I've often thought of using a flatbed and building your own body out of wood or you can buy the composite panels Motorhomes n caravans are made of to do it, not that I have that level of skill. The other thing I've seen on many van self builds is a lack of ventilation. My motorhome has a number of floor vents (primarily as gas drops for safety) and the roof vents even when closed are still vented so keeps the air circulating so letting the damp out.

@@forwardtothepast2411 Regarding your ignition/starting issues, make sure your earth strap is clean and not corroded, even if it seems tight. This can lead to all sorts of electrical gremlins. Check both the battery terminal and the cable from the engine to the chassis.
