Kokum recipe
Kokum from the mangosteen family dark red colored fruit, The outer cover of the fruit dried in the sun, after drying they turn blackish purple color, they are sour to taste and also this dried Kokum is souring agent so used to sour curies like dal, fish & prawns curries
Kokum juice is a simmer coolant is popular in Mangalore & Goa
1 cup dried Kokum Wash in running water properly & soaked in hot water for 1 hour
-After 1 hour squeeze and extract juices, add 2-3 tbsp sugar/jaggery/honey, dash black salt dash cumin powder. 4 cups of water mix and store it in a bottle
-Serve-I a tall glass add ice cubes, add kokum Sherbet mix add sabja.
MUSHROOM CHEESE CANAPES
-25 canapés
-200ml milk (or more required)
-2 cups mushrooms finely diced
-3 tbsp all purpose flour/Maida
-4 tbsp olive oil
-dash jaiphal/nutmeg
-2 tbsp butter
-1/2 tsp mixed herbs
-1 tsp garlic paste
-1/2 tsp black pepper
-1/2 cup grated cheese
-grated mozzarella cheese (garnish on top as required)
-2 tomato finely chopped (garnish)
Method
-Mix in a bowl milk, butter, flour, black pepper, nutmeg,salt, mixed herbs mix well
-Pour mix to cooking pot, turn on the heat over medium heat sauté till the raw smells disappears, stirring continuously in order to avoid lumps cook till the sauce thickens add garlic paste, grated cheese, finely chopped mushrooms continue cook for 6-7 more minutes stirring
-now turn off the flame allow the mixture to cool
ARRANGE THE CANAPÉS
-arrange the canapés in a baking try or a serving plate put 1 tbsp mushroom mixture, garnish with mozzarella cheese
-Grill for 5 minutes or till cheese melted
-remove try from the oven garnish with finely diced tomato, coriander leaves , corn kernels
