Recipe:
-Prep your Chicken Wings in a ziplock with Olive Oil and a nice Chicken Rub (I’m using Bird by @weathersbeef_bbq ).
-Shake it up to get everything intimately acquainted and then put it in the fridge for at least 2 hours.
-When it’s time to cook, fill your charcoal chimney with Wood Chunks and light it from the bottom (I used Apple Wood Chunks that I got from Western BBQ Wood).
-Once all of the wood is on fire, dump it into the Vortex.
-Place your Chicken Wings on the grill around the perimeter.
-Flip them every 5 minutes (this will make help them get crispy on all sides and the open air will keep the fire burning at a high temp).
-Repeat this process for 25 minutes (165F is safe Chicken temperature, but its okay to go way past that with Wings).
-When they get to where you want them, finish each Wing over direct fire for 3 seconds on each side and then remove them.
-Toss them in a bowl with a good wing sauce (I used Asian Zing by @bwwings )
-Enjoy!
