Larry, I've been watching your videos for a couple of years, they are just quirky enough to keep me entertained and coming back for more. On this video, you seasoned the meat and then proceeded to refrigerate it for "a couple of hours" before cooking. I am a semi-retired chef/teacher and I have been barbecuing and smoking meats for more decades than I care to admit. Meat, especially a thick slab of beef brisket, seasoned or unseasoned, will not go bad, spoil, or rot in a few hours. Refrigerating it will only add to your cooking/smoking time and will keep the muscle tight and unable to "absorb" the seasoning whether it's a dry rub or a liquid mop sauce. It's, dare I say it? an old wives tale and a suburban legend that meat will spoil that quickly. Besides, cooking the meat above 140 degrees for hours will kill any surface bacteria that may develop anyway. I hope this isn't too "preachy" Just sharing some info Bro.

Here in Memphis we know smoking meat! I've known about pellet fired grills for 20 years now and one of these days I'll buy one. For now my bullet smoker works good enough. There's a reason why a Bloomington, MN company chose the name of my city to name their company!

Looks like they nailed the automatic temperature control. Way better than my old grill where the only way to tell the temperature is by how much smoke is coming out of it. :-)

Amazing pulled pork - take a whole pork butt, season it with the same seasoning as Wolfe Pit. Wrap the pork butt in 5 layers of aluminum foil, make sure when you are done the side with the fat is on the top so when you cook/smoke it in your grill the fat will be soaked up by the pork. Cook it for 4-5 hours depending on the heat. In the end you will have the juiciest and most tender pulled pork ever.

Larry, in Texas they like to smoke brisket with post oak or mesquite or a combo of both, but here in ky. Hickory is plentiful and i like to smoke with hickory, maybe 80 % hickory and either 20 % applewood or oak, i think flavor is much better, i like a strong smoke flavor, and i know you live in TN. So i am assuming you like a fairly strong smoke also. I only season my brisket with kosher salt and fresh cracked black pepper, but i think i like more fat on my brusket than you, unless it is that tough gristle that won't render when slow smoking, anyway, nice job on the brisket cause it looks delicious buddy. btw, i noticed you all drug out your black cooking ninja glooves today, good idea, lol

All of my Walmart briskets are “Select grade”. I don’t know why they don’t carry “Choice”. I have to drive 40 min one way to Sams club to get a Choice brisket. Thanks for the video.

Huh, I forget meat prices differ from state to state. Walmart here in San Antonio sell for $2.26lb (was 1.96lb until a few months ago.)

This is my brisket seasoning: Cayenne, Coriander, Red chili flake, chili powder, Salt, Pepper, Dill, onion powder, garlic powder. It's not too shabby~

Great looking brisket Larry. Kinda pricey for me for the whole brisket. I look for sales when they are round $188/lb. Really like the Memphis cooker but I don't have room for any more cookers.

I trim aggressively. Philosophy: If you won't eat it, why cook it? There is plenty of fat marbled within the brisket. I also usually separate the point and the flat for even cooking. Simple seasoning and smoke low and slow before the wrap. Cook to about 180-185 then FTC, ALWAYS. I've never had bad results. The burnt ends are usually reserved and saved for winter Chocolate Habanero Chili.
