His judgement was affected by the caveat that they were complete novices. I assume if the challengers had been trained chefs with 10 years each under their belts the judgement would have been far more severe. As it stands I think the boys did surprisingly good for a first attempt, hence the high scores. All of them far exceeded his expectations.

If you watch the chefs' reaction video Joey's skill is apparently next level, because instead of using the more flexible Sashimi knife (the Yanagi) he was told to do it with, Joey accidentally skinned the fish with the significantly stiffer deboning knife (the Deba), but did it perfectly, something that astounds and confuses Chef Koji to no end

Chef Koji is the real MVP here, I feel like he really took consideration that the three of them are super duper beginners. I love how he actively praise them as well and highlighted the positive points instead of the negative ones. As a beginner it can be really discouraging to fail (even though it's very normal) and it can be nerve wracking to present your work to other people (let alone a Michelin star chef), so his positive reviews really warms my heart. He's a super kind and encouraging teacher.

Chef Koji was so gentle and supportive of them it really made me a bit emotional Because thinking through the lens of his life, he probably didn’t get as much praise for when he started learning how to be a masterchef, since chef apprenticeship is very very stressful and chefs aren’t always the best at being kind with words (part of the reason, of course, is because they want their chosen apprentice to improve). The fact that he had the idea of “The hate stops at my generation”, really made it touching for me

You know, I actually have a feeling that Joey is a silent genius and the fastest learner. Garnt may be the protagonist for the most time, but Joey is that side character that has hidden OP abilities that somehow surpasses the MC and has more potential than him. Meilyne robbed Connor of his second place. 😭 Besides the presentation, Meilyne had judged his dish as low as she did was because of both Scales and that it was to greasy. These were two things that even the Chefs said he couldn't do anything about since the dish was made to leave the scales on like Chef Koji had said, and the deep fryer that Connor had to use was already used oil which is not ideal as the Chefs said.

I think the chef being very positive and forgiving has more to do with the fact that he has been doing this for a very long time. Above anyone, he knows how long and hard it is to be able to perfect the cooking techniques and master the dishes. So when he saw the boys trying their best to replicate these very hard dishes that were only taught to them once, naturally he won't be too harsh on the techniques or the presentation, because that takes years to master. As long as the dishes taste decent and aren't completely inedible, I think that's good enough for him. It's like when you speak to someone who's trying their best to speak your mother tongue. You don't really care about their wrong grammar or pronunciation, you care about the essence of what they say. If you can understand what they mean then it's all good.

Conner had to fry a fish which frying foods isn't that easy honestly. I'm sure fish is even harder to fry. And Garnt had a hefty cooking time to speed through as much as he could. And I'm sure deboning a fish while its inside of a pot of rice makes it even harder. Great job to them all for even finishing their dishes and not having a mental break down lol

@@alexstrife-sinclair6391 I was in shock so I don't remember the level of pain (I cut a small nerve and still can't feel part of my thumb many years later), but I was actually pissing blood for quite a while, and that part is kind of a weird story. While I was sitting there with my thumb squeezed in my other hand, the wound elevated above my heart and strategically placed over the sink (whilst trying not to faint), many of my colleagues tried helping me stop the blood with their first aid knowledge, but to no avail. The dripping didn't show any signs of slowing down. As it was very close to the start of the service, everyone had to go back to work and I was waiting for my partner to come pick me up and bring me to the hospital. Then came a middle-aged waitress who timidly but confidently entered the bathroom I was sitting in, telling me she had "a gift for stopping blood". Now, I didn't believe in stuff like a magical, unexplainable "gift" (and I still don't), but I was desperate so I let her hold my thumb. She held it gently, without putting much pressure, and seemed to concentrate on her "gift" for a few seconds. To that point, as I said, the blood didn't show any signs of slowing down, and I was actually worried that it would worsen if people started handling my wound in untrained ways. Well, to my astonished relief, after her short little ritual, it completely stopped. It didn't even start again later and I could go to the hospital without ruining the car seats and worsening my anemia. It still gives me a little bit of cognitive dissonance when I think about it. I’ve tried cutting flounder before, it is fucking difficult as fuck. It is super flat with little meat, has a lot of bones and is a pain in the ass to remove the skin. Honestly well deserved win to Joey.

Sashimi is a difficult yet delicious dish i've ever tried, even became my favorite by how much effort & consideration you need to prepare, like i learned that you need to carefully filet it & remain it fresh as possible or else doing it wrong will result poor taste or discomfort itches in your throat. Good job
@Zelphyn

IKR, and they said Joey got the easy one. They have no idea how hard to fillet a bony fish. Less steps doesn't mean easier to prepare.

Yeah I’ve caught and (later that day) prepared my own flounder as a kid, and fuck did I butcher it, barely got any meat off and managed to give myself food poisoning. Still I think either joey or garnt both had the hardest
@Zelphyn

@@noahhkun5097 I agree, Garnt got the hardest one in my opinion but there's no easy dish there.

The bones and meat on the sides are actually my favourite, they're tender, crunchy and gelatinous at the same time. But yeah, deboning a flounder is pain if you really need to do it for a dish

How is a google reviewer more judgemental and critical than two actual professional chefs who dedicated their whole life to cooking and realizing how hard these 3 dishes are

Expertise isn't shown by the amount of words you can use to explain something, but gow easy you can make it to understand. Also, the judges have a reference point of a "industry level" standart

I also think that she was more critical because she is actually close to them but you could tell the chefs were being generous to them (taking in the difficulty of the dish and their general lack of experience in the kitchen) as opposed to being objective like Meilyn.

Koji is the MVP of this challenge. It was amazing how supportive, patient, and uplifting he was through the whole thing. I don't think they could have gotten a better person to teach the boys. This was a really great and wholesome show actually. I loved this episode!
