to distill the last dab by itself you would need to use some sort of base to neutralize the acid in it. then it would be able to support yeast.

Vinigar is the main ingredient in the product, you can not remove the main component and still have the product. A better angle would have been to add pure capsaicin to a liquor.

U can actually get peppers that are identical to a habanero but they have about 50 scoville rating So pretty much zero heat. I cant remember the name of them but im sure a quick search would yield the answer

Oh yeah they do, I make my own hot sauce with jalapenos and one other chili, I forget the name right now, but I add brown sugar and it brings out a sweet fruity flavor with the heat. Edit: The other chili is serrano

Considering there is apparently 0 grams of sugar in this hot sauce was part of the problem in why it did not ferment on its own. The vinegar and salt probably did not help either, but I have to give the whiskey tribe credit for staying true with, "Will this random item ferment on its own and what is it going to taste like after we distill it.?" Even if you'll had added sugar with water to dilute the thickness of the hot sauce. Their would of been a good chance the ferment ability still would have some issues.

The Fum thing makes a lot of sense. Many years ago my now wife put me on bar straws ( something to do with my hands ) and cinnamon Certs ( a bit of intense sensation ). I went from over 2 packs a day to nadda. Kissing was once again allowed. ( Though I did catch her years later with a cigarette )

I have a friend who infused alcohols with a ton of different flavors (pear whisky is amazing), and he would regularly run shot contests. One time when I was in college, he infused reaper peppers into white lightning as the last shot for the contest, and he didn't tell anybody. Everybody down the shot and half of us damn near had to go to the hospital, as that was the most excessively hateful concoction imaginable. What you did here is only marginally better, as the distillation process is effectively turning the hot sauce into pepper extract in an alcohol base, equivalent to a riot control spray if you were to load it into an aerosolizer.

Brushwood's reactions are my faves. So in the quest for some jalapeno whisky that is not sweet I did some rather low cost experimentation. This amounted to buying some cheap, fairly neutral tasting whiskey (Canadian Club) dicing up pickled jalapenos for one jar and fresh for the other, and letting them sit for 3 months in a cool dark place. The pickled jalapeno whisky was Nasty AF, salty, and gross. The jar with the fresh Jalapenos however was something interesting. The whisky was quite warm, as I was hoping and it had a lot of the natural floral notes from the jalapenos as well. It's not something I would drink frequently, but it's also not bad at all. One of these days I'll make another batch with something full of character like a good rye or an Islay.

I make hotsauce at home by fermenting the ingredients before I bottle it, and it surprising good mixed with tequila honestly. And the sauce is HOT 🔥 🥵 it's got Carolina reapers in it 😅 maybe try adding some yeast to a fermentation blend the letting it work off and see what you get 😉

quick chemistry lesson capsaicin is soluble in alcohol meaning you will extract that from sauce so if you use more than one bottle you will get way more scovile from it. and when you distil it most of the capsaicin is left behind in the byproduct.

Ooo. Random 4am idea for y'all. How about you ferment and distill some *_spicy_* yellow dal lentil soup? No idea if you *_can_* even ferment legumes, but hey! Might be worth a shot, there are some nice spices and aromatics that might pull through with the distillate.

I made a gallon of wine from horse radish roots and habenero peppers. I made salsa from the pulp. Then I jacked the wine to make a 5th of Horseradish/Habenero Jack. Goes well with roast beef sandwiches.

If you want a bit of science: when you two nearly died around the 5-minute mark, that was the same reason that the "Prairie Fire" shot works. Alcohol is very good at opening pores in your mouth. Capsaicin (the chemical that makes spicy things hot) is then able to easily enter the enlarged pores. Your brain is confused by the capsaicin molecule and interpreters it as pain. In response to this, your capsaicin-filled pores clamp shut, enhancing the pain!

I ferment hot peppers for sauces all the time. Reapers and peppers in the ghost pepper family dont have enough sugar on their own. If you mix in a small amount of malt or sugar it will ferment.

Capsaicin works specifically on the heat receptors of mammals. The reason it didn't ferment would either be the vinegar in the base or the simply because it doesn't have enough sugar content.

So as far as I understand, the reason alcohol "burns" is because it lowers the threshold at which the receptors detect burns, to below body temperature. Capsaicin (in chili) attaches to the very same receptors and tricks them into thinking you are being burned. So the answer to "why does it burn more" is: You just made your receptors MORE sensitive with alcohol and then gave them a massive dose of chili.
