Those chips are called "Platanitos" and they are made from "Platano" (plantain). Platanitos literally means "little platanos". The fruit is similar to bananas but the taste is different, still sweet but slightly more sour/acid and are firmer when cooked (plantains slices will keep their shape when fried, while bananas usually become a paste). Can't say I'm sure how they cook the chips, but they are likely fried like potato chips. They are a very popular snack around here.

every time we go on a hike, we’re like, “there should be a pizza stand (or a tequila shot or ice cream cart) up here!” Finally - someone gets it! Guess we’ll have to save our hikes for when we go there. 😅
