Karjalanpiirakka or Karelian pasty is a traditional Finnish pastry with a thin rye crust, a filling of rice or mashed potato. And has earned the heritage-affirming status of Traditional Speciality Guaranteed from the EU, meaning the pastry must be made according to traditional techniques to earn the name.

When I was a young boy I used to spend a lot of time in Karjala at the summer when there were no school. My grandma made a batch of around 200 riisipiirakkas every Saturday morning. Piirakkas were the first things to be cooked in the baking masonry oven because they need a lot of heat. Thanks for the video, I need to practice the art of making piirakkas myself. Unfortunately, my grandma is not here anymore but maybe her sister could give some tips to make them as I remember them to be.

Very good! I've made those "piirakkas" long time ago. I think, home made pies are more tasty than those, they sell in the markets. Thank You for the video again! It is so nice to hear You speaking finnish too! When I lived short time in Ohio, I missed my home in Finland. Then I travelled from USA to Canada. Oh, I was so happy, when I realized that I came to the country, that was somehow like Finland. I opened the carwindows and smelled the forests! (Koivujen ja mäntyjen tuoksu) Sometimes it is not easy to write or speak english! I have forgotten so many words. Because I am finlander, I cannot be sure, if I say things correctly in english. Languages are so interesting! I started to study russian few years ago. It is very difficult, but I wish that some day I could be as brave as You and make a video in russian! 😊 Bless You!

They are so common in Finland, you can eat the Karelian pies like every day. 😁 Some make the egg butter in margarine. I warm up my store bought rice pies and spread some butter or margarine on them. Then I add sliced (boiled and cooled down first) eggs on top and some salt. That's the easiest way to get tasty rice pies. Also it acts as a balanced meal (carbs and protein), for example if you are busy and hungry.

It is daunting to start baking them; you need to be fast and attend to details. Easy? Good. Mom used to say she gave up on them, she's from North Karelia, Joensuu. Grandma had a wood owen and would handle the very hot pies with bare hands and brush them with a milk and butter mix. She would tell me she's alright as a blacksmith's daughter. We would go bye a particular rye flour. I guess I gave up too, but my big sister made them pies to President Ahtisaari while working for the Finnish Embassy in Norway. Your son takes part in baking too so nicely. I wonder if he is part Finnish or all Canadian in a way. Probably like me asking am I from Joensuu when I'm from Helsinki. I think I pretend to be part Karelian. Roots.

@@RoyRissanen Yes, I read you said that. 🙂 That’s why I suggested that instead of making egg-butter you could try first spreading a very little butter on the Karelian pies and then adding some egg that could be in slices, or in halves which is how I do it. I don’t add any butter, though. 🙂 I think one can enjoy Karelian pies in many different ways trying different toppings. Or just on their own; not just following the traditional way. 🙃
