MY grandma and great-aunts did it like this! They grew up only using older chickens for eating since you didn't want to eat a chicken that still layed eggs! This method removed the stronger flavor of the older chicken and tenderized it a little. That's why REAL old fashioned chicken and dumplings had such a good flavor too.

Went to grad school with a guy from Mozambique who made chicken like this. To this day one of the best meals I’ve ever eaten. Just blew my mind.

Sam! You have the makings of some amazing Chicken “milk pepper” gravy! Make a rue with some butter and flour. Then add your leftover milk / chicken liquids. As it thickens, season with salt, a pinch of nutmeg, pinch of cayenne, and plenty of fresh cracked pepper. If you let it reduce down to sauce level you can dip those chicken legs right in! Yow Boy! (Note. You might choose to skim some of the fat or use a gravy strainer gadget on your leftover milk / chicken liquid 7:36 7:36 first)

Love this concept ❣️ I knew this one was legit because my Grandma used to make chicken like this. She also cooked mashed potatoes with buttermilk, made molasses brown bread like I haven’t tasted since her passing, and the best homemade crumpets I’ve ever had! Thanks for the memories ❤️🇨🇦

So I tried this recipe because STCG did. Was it easy? Yes. Was it crispy? Yes, in a fried-shrimp kind of way. Was it tender? Yes. How'd it taste? I could taste the garlic, and the spices in the breading and it definitely needed more salt so I sprinkled some on, but I couldn't really taste chicken. I followed STCG's instructions/timing exactly, but it was like the taste of the chicken itself was poached out of the legs lol. I'll stick with old-fashioned Southern buttermilk fried chicken for the rare occasions that I fry chicken -- pretty much the same level of effort, superior taste, superior crunch! 🙂

I was thinking of this. 40 min for those legs sounded to much for me. At that point the milk would taste more to chicken than the chicken itself. I would submerge them in the milk bath and half or so the poaching time

I did leg quarters in milk in the oven (saw the idea on another cooking channel , Glen and friends) but I decided after the cook ( since I too wanted to do something with the milk, and had made mashed potatoes as a side ) to use the milk to make homemade white gravy for the potatoes, it was delicious.

I cooked the legs in raw whole milk w/ 200 gr. butter. Leftover stock + clams+ diced potatoes + pearl onions.

Southern fried chicken is never boiled/fully cooked in watered down milk before being fried. Not saying this can’t be a thing, but its not the same.

If it helps at all, it works better with buttermilk, the way we used to do it growing up was to marinate the chicken in the fridge overnight in buttermilk, (this works with duck, goose, rabbit and squirrel too, removes a lot of the gamey taste, might try for venison too) make sure it's submerged, or you can try vacuum sealing in marinade for 6 - 8 hours in fridge. Crushed up corn flakes work well for a coating. 👍 Love the channel dude.

Was cooking for a food service many years ago at a cafeteria at a hospital and we had to use a lot of standardized recipes. We had these frozen cod filets which were nothing special but one recipe was for them poached in milk. It really changed a cheap shitty frozen piece of fish into something special. Forgot about the poaching in milk thing until this and will definitely give it a try!

I was wondering if I could change it to buttermilk. I don't usually buy sweet milk. I use buttermilk in my mashed potatoes and mac and cheese, and I have used it to marinate chicken and pork chops. I'll definitely try this method for frying chicken.

Looks like a must-try. Instead of coating meats in Planko, if you want to kick it up several levels, roll in a stuffing mix. But you will have to run the rolling pin over it to make it finer.

Makes sense. It's common southern technique to marinade overnight in buttermilk. Tenderizes and adds flavor.

I believe you that cooking the chicken in milk first makes it tender, but I don't think that saying at 6:49 "you can just pull the chicken meat right off" the bone was the best demonstration of it being tender, because you can also do that with just regular plain old fried chicken.

Of course it would! Great idea. The milk - once it's been infused with chicken - can be used wherever you would normally use milk in any old recipe. Go all out, turn that chicken-milk into icecream. But please, remember food safety though as you're working with dairy and raw chicken initially. Enjoy!

I would absolutely want to try southern style milk gravy with that leftover milk. The roux needs to be browned first, so I'd consider saving some chicken fat from a previous dinner to brown the flour - then add this milk. I'd probably remove the garlic gloves and then add back in only if needed.

Here in Arizona we have restaurant called teriyaki madness. Their spicy teriyaki is the bomb! Grilled chicken is then cooked with zucchini, carrot and cabbage on rice or noodles. You can also get it with shrimp or salmon. If more heat needed they have it. They call it mad sauce.

I used to do the same thing with rabbit. I would simmer in chicken broth first until tender. Then bread it with whatever breading you like. It was the perfect thing to go with a bowl of rabbit stew.

I've done something similar except cooked the chicken via sous vide, and then battered and fried the chicken just long enough to brown the crust. Most tender and juicy chicken I've ever made!

I have a chicken braised in milk recipe that always comes out good, very few ingredients. I don't think I'd want to go through the effort of frying them after because I'm lazy! Anyway, the braising makes for a delicious chicken and the liquid easily makes up into a gravy for rice or whatever after.

Sam could you do a show on deep fried sea food like clams shrimp oysters it seems like most places use to heavy of breading or over cook it. I would like to see your take on these. Thanks much appreciate your teaching of cooking thanks again

Might be a good use for milk that's getting close to its expiration so you don't feel guilty about waste. You might also be able to turn the leftover cooking liquid into a cheese sauce for a stovetop mac and cheese side dish. Though you're going to be busy breading the chicken and deep frying it...

Here in California we have something called Krispy krunchy Chicken and they do the same thing with chicken except they add orange juice to the milk and then when you get the chicken after it's fried then you see the orange strips through it but it is amazing

My mom was cooking chicken like this in the 70’s!!! Was a favorite in our family. She would make thighs and legs. Probably because they were cheaper. And she used regular bread crumbs….home made of course.
