Lemon rice recipe
Friends today let's see how to make festival Lemon rice or lemon rice served at weddings.
Prep time 10 minutes
Cooking time 10 minutes
Serves 8
1 cup is 250ml
Heat 1/2 cup Sesame seed oil.
Add the following for tempering
2 tsp mustard seeds
4 tsp chana dal
4 tsp urad dal
1 ponch fenugreek seeds
1/2 tsp cumin seeds
Stir for 1 minute.
Add 1.5 tbsp Roasted peanuts and 1 tbsp cashew nuts
Stir until cashew nuts changes color
Add 2 tbsp chopped ginger, 2 tbsp Green chillies, curry leaves, 1/2 tsp asafoetida, 1/2 tsp turmeric pdr
Mix well and stir
Add 1/2 cup boiled green peas.
If you are using frozen peas you can add directly without boiling.
Stir on high flame for 2 minutes
Now add 1/2 cup hot water.
Do not skip adding water. It lends moisture and softness to the lemon rice. Otherwise lemon rice can turn out dry.
Add salt and half tsp sugar. Sugar balances the sourness of the lemon.
Switch off the flame and add juice of 6 lemons.
Add 4 cups of cooked rice. Mix well.
Garnish with coriander leaves.
Enjoy yummy Lemon rice.
