Hi Kristen, you can purchase minute steaks and use them in place of cubed steak. They are a more tender piece of meat. We hate cubed steak because they can be tough no matter what you do sometimes. Hope this helps. Love the videos!
Hii...if you really want to tenderise your meat,use meat tenderisers as we asian Indian do...meat tenderisers are basically raw papaya powder or Kachri powder (dried wild melon powder).. you can also find meat tenderisers packet in Asian super store.. you can also buy raw papaya make a paste with water and use.. to use anyone of the above just take the required amount( with proportion to meat, )add them to meat with salt(to taste) and marinate ... The point to note is if you the time and amount of tenderisers..the higher the time, less amount needed than usual.. The tenderisers and raw papaya have their own taste.. only put the required..do not overuse..it will give wierd taste.. Less is more..an pound the meat before tenderisers so that the meat is evenly tenderised.. The meat is not washed afterwards.. you can also add all the marination ingredients with salt and tenderiser..at once.. This method is always used in India and nearby countries for softening meats before kebabs and barbeques...its and old age method.. I have heard pineapple juice does the same job but haven't used it myself.. I hope this helps 👍
Get the angus cube steaks from Aldi. They are the BEST. Soak in the buttermilk overnight. Before cooking, I bread and put pieces between parchment or wax paper. Right before frying I rebread one more time. The soaking in buttermilk overnight and the meat from Aldi are key - so tender!!
It's not just you for the meat not being tender. Sometimes it's the cut of meat they use to make the cubed steak, and also how many times they run it through the tenderizer. If you buy meat from a store that comes pre packed I find it is usually more tough than when its cut in store. You could try asking the meat department associate (if they do cut in store) to get you some pieces that are extra tenderized. Hope that helps! 😊
Kristen I cook cubed steak a lot and they are usually pretty tender....some more than others. I soak in buttermilk sometimes but coke is the best tenderizer I've found. Let soak overnight or all day....the longer the better. I always cook on lower heat and cook longer.... maybe quick fry to brown and then put in oven on lower heat for a bit longer to finish. I’d recommend continuing what you’re doing with the cube steak but once you’ve made the gravy throw it all in the oven low and slow. This used to be our Sunday meal. My mom would do as you did before we left then she’d cover in foil and leave in the oven at about 250 until we returned home. Cooking it low enhanced the flavor of the gravy and it didn’t dry out. She now just cooks at 350 for an hour or so if she makes it. I’ve done it in the crockpot but it doesn’t develop quite as much flavor.
Before I got a pressure cooker, I would fry my cube steak then simmer them on low for one hour more in gravy. Comes out tender and perfect everytime. Now I have a pressure cooker, so their tender always in less time. ❤

If you tilt your skillet up the grease will puddle, then add your flour to the grease and mix it up until the flour is combined and lay the skillet down and add your milk and stir it until thick. This way the gravy won’t get lumpy.
I cook my cube steaks in the crockpot with some roasted red peppers, mushrooms, Worcestershire sauce onion or onion powder. They are so tender and we love it. I but the jar of roasted red peppers at Walmart. Just a suggestion on the cube steaks. Anyway in the crockpot they will be tender. Everything looks delicious! Thanks for sharing!
You can cook them all at once and once the steak is browned put a lid on it and let it cook all the way through covered. If it's not tender that way because that's how I do it and mine's tender we need to go back to the drawing board! I also think you didn't pound it enough it was still a little thick.

As a farmer that produces their own meat and sells meat cut and as a meat cutter use the cube steak which has been run through the tenderizing machine at the butcher shop or at the grocery store

Try using the already tenderized beef cutlets when making that dish. I always use them. They even have them with pork. Much better. And lots more tender. Have a awesome day. 😀

A tip on the Cubed steaks, season and cook them in the instant pot first. When they are finished cooking bread them how you Normally would for a chicken fried steak and fry them to just cook the coating. I seriously hate a chewy chicken fried steak! Hope this helps.
I put my steak to defrost in water and vinegar. Leave it for couple of hours. I'm from P.R. and steak is just part of our meals. "Biftec encebollado, Biftec en salsa y Bistec empanados" yuuuum, look it up 😊
I use the meat tenderizer with the pointy side, so you poke holes into the steak. I pound the meat hard. Works for me. But if you ever get a chance get the pork cubed steaks. Those come out so tender and you don't have to beat them so hard.
The chicken fry probably depends on the cut of meat you got. Cube steak or tenderized top round steak is best i think. Any cut of meat with the word "bottom" in it will be tougher.

I love Red Lobster! It is my favorite restaurant! I love seafood too! My bday is April 29th and last year they had limited carry out menu and my favorite Rainbow trout wasn't on that list! Instant pot is the best way to do cube steak. Can of mushroom soup large can . Serve over rice. I just season meat put in instant pot pour soup over top and cook for 25 min
I've seen the cream of Bacon at Kroger's near me. I think it would be good in a bunch of different casseroles, maybe in place of the cream of mushroom. Or in scalloped potatoes.

I used to have the exact same issues with cubed steak until I tried a different butcher. I found that cube steak from Walmart is way thicker and tougher than the cube steak from my local Piggly Wiggly. I don’t know why, but it is a better quality meat and cooks up tender every time vs the Walmart meat. I don’t even have to use the cleaver or the buttermilk soak. Tony’s seasoning, then seasoned all purpose flour, then cooked the exact way you did. Try a different butcher.
Everything looked wonderful! I know when I cook cubed steak from a Pioneer Woman recipe, I heat the veg oil with a couple pats of butter to med/high heat and only cook 2 min per side. It doesn't take long at all when the heat is up.

To tenderize try tough meat try soaking meat in a mixture of baking soda and water - google for ratio or soak in plain yogurt for 4 hours as a minimum. Love your videos.

When I do country fried steak, I use cube steak or what we in NC call hamburger steak. It's already pound out and fries up easily. I can't wait to try the recipes. If it wasn't for vlogs like yours I'd probably be fast food all the time. You keep testing and I'll keep eating. 😊
