BREAKFAST- Mashed Sweet Potato Bowl:
1 chopped and peeled boiled sweet potato
1 banana
1/4 tsp vanilla extract
1/2 tsp cinnamon
water, add a little bit at a time until you reach desired consistency
mash it all together
Top with blueberries and 1 tbsp of maple syrup
Sautéed Veggies:
Red onions
Mushrooms
Zucchini
Tamari soy sauce
LUNCH- Fully Loaded Potato:
Baked russet potato
Topped with:
Black bean soup (recipe below)
Chopped butter lettuce
Salsa
Potato cheese (recipe below)
Tomatoes
Green onions
Tabasco chipotle pepper sauce
Black Bean Soup:
2 1/2 cups uncooked black beans
6 cups veggie broth
1 1/2 cups crushed tomatoes
1/2 red onion
1 red bell pepper
1 carrot
2 Anaheim peppers (remove the seeds)
5 cloves of garlic
1/2 cup cilantro
1 1/2 tsp oregano
1 1/2 tsp cumin
1 tsp paprika
I cook this on an instapot amzn.to/2ReTLga
I just throw all my veggies in there, click the bean/chili button and it's done in 48 minutes!
After its done, I use an immersion blender amzn.to/3fREITF and blend it all up!
Smoky Potato Cheese:
2 steamed yukon gold potatoes
water (eye balled it...I would say its about 1/3 cup)
3 cloves of garlic
2 slices of pickled jalapeños
1 tsp liquid smoke
1/2 cup of nutritional yeast
Salad:
Garden salad
Balsamic vinegar
Salt
Black pepper
DINNER- Chopped Salad:
Arugula
Butter lettuce
Cucumbers
Red onions
Tomatoes
chop it all up
1 cup cooked and warm brown basmati rice
Topped with homemade raspberry vinaigrette
