🌼Roasted Potato recipe:
•1 bag of multi coloured small potatoes
• 1/2 large onion
• 1 1/2 tbsp olive oil
• 1/2 cup fresh dill ( loosely packed )
• 1/4 cup fresh parsley ( loosely packed )
• 1 sprig fresh Rosemary
• 1 tsp salt
• 1 tsp pepper
• 1/2 tsp chilli flakes
• 2 bay leaves
• 1/4 tsp fennel seed
• 1/2 tsp thyme
• 1 tsp mustard powder ( optional )
- preheat oven to 400F
- wash and dry potatoes
- throw everything into a baking dish ( that had a lid ). Give it all a good mix and let cook for about 30 minutes, longer if necessary:)
🌼Simple Curry
1 small onion ( chopped very small )
3-4 cloves garlic ( minced )
1" fresh ginger ( minced )
1/2 block extra firm tofu ( cut in 1cm cubes )
1 can coconut milk
1 tbsp tomato paste ( heaping )
1/2 lime
small handful fresh basil
1 tsp coriander seed ( crushed with mortar and pestle
1 1/2 tsp paprika
1/2 tsp lemon peel spice ( optional - you can just zest the fresh lime we'll also be using in this recipe )
1/2 tsp chilli flakes
1 tsp salt
1 1/2 coconut sugar
1 tbsp tamari
1/2 tbsp sesame oil
Heat a pan on low- medium heat, add sesame oil, onion, garlic and ginger. Let cook until onion becomes translucent then add tofu. Sauté until tofu turns slightly brow
Add you spices to the mixture, coriander, paprika, lemon peel ( or lime zest ) and chilli flakes. Let cook until fragrant ( about 1-2 minutes ). Then add coconut milk, tomato paste, basil, lime juice, salt. Mix really well until tomato paste is dissolved into the coconut milk. Add coconut sugar, tamari, stir and cover. Let cook for 20-30 minutes.
Serve with rice, fresh coriander, sesame seed and more lime!
Chocolate Granola
3 cups oats
1/4 cup pumkin seed
1/4 cup cacao nibs
2 tsp sesame seed
1/3 cup walnuts
1 tsp salt
1/2 cup cocoa powder
2 tbsp tahini ( I would of added 1/4 cup in total but thats all I had in the house )
1/2 cup maple syrup ( if you add more tahini remove a couple tbsp worth of maple syrup )
2 tsp vanilla extract
handful dried cranberries
Preheat oven to 325F
Mix everything together in a bowl very well, spread out on an oiled baking tray ( or use parchment paper )
Bake for 15-20 minutes. Every oven is different so keep an eye on it! Let is cool completely on the tray you cooked it on, then enjoy!
