To make the kim-mari, cook 2 ounces of glass noodles by adding them to boiling water for 7 minutes. Drain and rinse under cold water. Add to 1/4 cup small diced carrots, 1/4 cup julienned potato, and 2 tbsp of chopped scallion greens. Using scissors, cut the noodles into small pieces. Add 1 tsp sweetener and pinch of salt, together with black pepper.
Take one sheet of nori and cut it in half, lengthwise. Spoon half of your glass noodle mixture into the middle, and roll the nori sheet up to create a long, thin cylinder (about the width of your index finger). Repeat with remaining filling.
To make the batter, mix together 2 tbsp flour, 2 tbsp potato (or corn) starch, 1 tsp garlic powder, 1/2 tsp baking soda, and up to 1/4 to 1/3 cup of soju (or sparkling water). Should be the consistency of pancake batter. Cut the rolls of seaweed into 3 to 4 smaller pieces (like in the video). Dip them into the batter before dropping them in oil (at 350° F). Cook for about 1 minute before draining. Let them cool completely before frying them once more.

I don't know why but I thought tteokbokki was intimidating to cook. It always looks delicious though. And I like that you also showed how to use sweet potato noodles. That looks like a great rainy day or any day meal.

Joanne Lee- Thank you for showcasing this wonderful meal. I've never heard of kim-mari before but it looks simply delicious. I have to get nori & apple syrup so I can make it. Please keep sending us interesting recipes. I've never been much of a veggie eater but due to health issues, I seriously need to incorporate more veggies into my diet. Deedee! Thank you for this comment!! And you don't need apple syrup for the kim-mari recipe--that's just what I had. You can use any sweetener, like maple syrup, agave syrup, or even sugar. Just a little sweetness to give the flavors a bit more complexity!

I have given up making tteokbokki from scratch and buy every possible brands to try in the market instead. Yes, I am a lazy and not so talented Korean:) I am just so amazed how your dish looks so scrumptious compared to mine! You keep making marvelous tteokbboki and I will keep buying new brands!

Hi! I recently got your cookbook - what a masterpiece! It made me cry and it also taught me new vegan recipes. My diet is not entirely vegan, but I try to incorporate as much plant-based meals as possible. Would brown rice cakes be better? If you go to the Korean grocery store, they'll often have fresh brown ricecakes!

Try consuming with protein and fibre source to slow the absorption of carbs. I’d mainly be double checking the sauce sugar amount as that is where a lot of fast acting carbs would be!

my tteobokki is always chewy? how do i make it soft (from frozen) as in Australia we dont get fresh tteobokki?

You're probably not cooking it long enough. Even with the most frozen tteokbokki, if you cook it long enough, it'll get super soft, almost like cheese. If you run out of liquid to continue cooking, just add a little more broth or water. HOWEVER, if you wait too long after cooking it, it'll get chewy again--especially if it was frozen to begin with. Best to eat it IMMEDIATELY!

Just skip the gochugaru and only use gochujang! And use maybe half of the gochujang called for in the recipe!
