Love those books as well. Just took all my canning and dehydrating books to Fed Ex Business Center for spiral binding. The cost was about $4.00 per book and done within a couple of hours. They all open easily and stay flat on the counter !!!

Years ago, my son called my canning "science experiments" & didn't want any canned foods from me. I tried to convince him that canning requires a lot of cleaning, sterilization, etc. Well, he got sick with one jar & I found out why. Hubby's job is to pressure can in the garage (we have the 2 largest All American canners). All he had to do is watch & listen for the gauges/weights & timers. I caught him snoring 😴 on the job!! 😨😲 I got all kinds of mad & fired him. 😠 Now, I do it all. Son now eats my canned foods & says all are delicious & doesn't make him sick. 😊 My vegetable soup is my fav. Canned spinach sounds interesting!

Your chipotle black beans are an absolute favorite and I had them on a big tossed salad today as the protein. Many thanks to you and the other "Collab Ladies!" We had the War of the Potatoes in my family. I decided one year when I had a large amount of extra potatoes that I was going to try canning them. My Dad's mom canned potatoes every year. My Mother was dead set against it. I think we used 3 quarts of the potatoes and we ended up discarding about 18 quarts to get the jars back. For the record, I loved my canned potatoes.

Now when I can chicken breast I add 1/2 of a thigh (bone in & skin on) to the jar and it adds the needed fat and so much more flavor! And I add some chicken broth to it as well for even more flavor. That is for a quart. If I were doing pints, 1/4 of a thigh would be fine. You don't need much.

@kathleen8980
@kathleen8980 4 года назад
I started canning in 1980 and only just started canning potatoes this year. I tried canning them both in water and dry, and I must say I love them dry canned. They come out cooked, firm and make the best home fries. A real time saver with the same results as when making them the more time consuming way. I've also used them in on pot meals with my dry canned ground beef and vegetables, to which adding a tiny bit of Cowboy Candy gives the dish a little zing. When dry canning the ground beef (which I learned from you) I give the browned meat a quick rinse under hot water which washes off any remaining fat. After processing, the meat no longer clumps, it remains brown and tastes more like before it was canned. Without rinsing off the fat the meat would clump, turn a pinkish color and the aroma was more like dog food than ground beef.

I LOVE these video's about what you (and others) would or would not can again, and why! Things I won't can again............a couple years ago a popular youtube video was shared about making grape juice the simple way, loading up your jars with grapes, lots of sugar, and boiling water. I was curious about an easy method since I didn't have a steam juicer, and it was awful. Super sugary, slightly grapy water. Never again. I also did a Mrs. Grass packet for canning chili. That was horribly sweet, and won't do that again either. A canned pea soup recipe was very, very garlicky, and I ended up throwing most of that out. Such a waste of money. I'd like to try another attempt at the pea soup again though, as I usually love it.

I will definitely can any and all beans. They turn out perfect compared to the stovetop. The cost is roughly 15 cents a jar & I can add whatever spices I want. Never again will I can potatoes. I was so excited because I eat potatoes pretty much every day & ended up wasting delicious organic yukon and sweet. They were so gross! Lol

I find it interesting you don’t like the cherry burbon bbq. I made it this week and I loved it.

I love the videos you did for chicken with bone and skin. I am going to can that next! I thought carrots were a waste of shelf space and they took my jars out of rotation. I prefer to dehydrate carrots and potatoes for that matter because you can get so many dehydrated carrots in one quart jar. Also canning orange marmalade was worth the work for me.

Agree, Meatloaf was like dog food to me. I will no longer can any sausages or chili with beef.

Please DO canned kale and spinach canning! I've blanched my kale and frozen it planning to can it. We've had a bumper crop this year. ALSO want you to do the chicken canning you like too! Frozen some thighs that were an incredible buy and want to can them as well.

I also would love to see how you can spinach. Please comment on how it differs texture and taste wise from the crappy store-bought canned spinach.

I have no family. That means absolutely no living family and my only close friend is my caregiver who's been with me for quite a while and works for an agency and is paid to be here. So I think it's pretty safe to say I can try what I want or not. But I do share my food with my caregiver and I'm teaching her how to make macaroni and cheese tomorrow. I will make two 9 x 13 aluminum pans and she can take one home with her and her little boy. He comes every day to see his Nanny and that is me! I also bought a full share in a CSA because due to the Nesco electric canner which also Cooks as a slow cooker and a steam cooker and a pressure cooker I can can again with these hands that hang on the end of my wrists wondering what to do!! I have started buying jars and I can't wait. No they don't can as many jars as a canner on the stove but there was no way under God's heaven that it is safe for me to can with a canner on the stove ever again! And I'm going to cry if I don't go. Be well!

Manwich was a HARD no from my family. Breakfast sausage patties - yuck on texture (mushy dog food), but flavor was fine (can repurpose into breakfast casseroles or omelets).

I won't do carrots again. They came out so mushy and had an aftertaste we didn't care for.

Just wondering if that is a small insta pot on your counter. If so, wondering if you have a video where you talk about it. I am thinking of getting one, but with being single wondering about the size and if worthwhile. Thank you for all of your awesome videos!

I agree with your comments! I did about 24 pints of par cooked jimmy deans sausage I couldn't believe how awful, I dumped out all of them. Chicken breast, patatoes, never again. I do small batches of things I haven't tried because of these horrible experiences.
