Greetings! I promised that I would start making some lighter recipes for the beginning of the New Year and here is the first. Molly and I came up with this one. It's a take on traditional Southern style smothered pork chops. You could easily do this with a thin cut pork loin chop. We had just eaten pork loin for New Year's dinner so we didn't want to repeat. We came up with this one.
This recipe starts off with boneless skinless chicken breast that we seared. If you would like to know how I do this you can refer to this video:

I removed the chicken from the pan and only added about 1 1/2 tablespoons of a light oil. I used Sunflower oil. I added a large sliced onion, a pound of mushrooms and a bag of fresh baby spinach along with about two to three cloves of chopped garlic.
I added the chicken back to the pan and topped it with the veggie mix. Topped all that off with some 2% milk fat Provolone cheese and let it all get melty and delicious.
Served alongside some oven fried potato wedges this was a delicious, nutritious and light meal.
