Hunting is part of our evolution, you can't just throw thousands of years of evolution out the window and magically materialise empathy towards all animals. There are still so many things humans do that are rooted in "caveman times" without being aware of it. Actually caring for animals, even if it's just to maintain a species, is a very recent development, something from the last 100 years. It takes a lot longer to outgrow primal behaviours.

Think about it when chopping down plants too then, just because they don't have a nervous system doesn't mean they don't have equivalent structures that use different mechanisms. There's no way around taking life if you want to be alive and if you want to be healthy ruminants animals specifically are essential since that's what we are adapted to eat. The best thing you can do is source it ethically by making sure animal products are grass fed, pasture raised or wild caught. And actually more animals are killed with the production of agricultural crops than regeneratively farmed animals because it destroys ecosystems, causes habitat loss, causes pesticide and farming equipment deaths whereas regenerative animals actually support the environment and ecosystem. Also a single cow can produce about 250kg of meat which would last most people over a year and even people on carnivore close to a year, crops on the other hand kill thousands per acre and it's way more brutal than getting shot in the head.
