Have you ever wondered where pine nuts come from?
It may sound obvious, if you think of their name, but we often overlook the obvious and rarely consider the origins of our food.
You can even harvest your own pine nuts, provided you follow whatever regulations are in place in your area. Ideally, use cones that have already fallen off the tree or you can remove them without damaging the tree. Don’t take more than you need!
Of course the locality point speaks to those living in Europe and North America!

I'm Portuguese. I used to go collect wild bay leafs in the summer with my father and would pick the pine cones from the floor to eat the pine nuts. Although we have a lot of pine tree forests in Portugal now is actually illegal to collect wild pine nuts because even if we take them from the forest floor we are not allowing the propagation of the species. A good thing is that pine nuts are not typically eaten in Portuguese cuisine, we only normally eat them at Christmas as a raw nut. More and more people now eat them in pesto as well, because of the internationalization of that sauce. But because pine nut are so expensive they often trade pine nuts for other type of nut.

I believe you can use any nut or seed. I think walnut is the most used alternative.

She played the potatoes you have boil them with skin on then remove the skin after its boiled that's how you make it properly here in italy

When I was a teen, I was at my uncles home in Italy, getting those nuts from the pinecones and opening the shells with a hammer. Took appr. 6hrs to clear an entire big bucket, and I ended up with a not even a full cup of the nuts. Since then, I treasure them when I buy them and appreciate the hard work behind! Cheers!

Also for anyone looking for an alternative, pumpkin seeds make excellent pesto! I worked at a restaurant that sold vegan pesto, and since we used so much of it, we used pumpkin seeds instead of pine nuts. And we used nutritional yeast instead of cheese.

When I was young in our house in the south of France, every summer I used to pick up the pine cones on the floor, sit on the outside stairs and bash them with a big rock to eat the sweet pine nuts inside. 🥰 such fond memories. Nowadays, the ones I pick in the garden always seem to be empty haha. Probably the squirrels ☺️

I love the soft creamy texture of Pine Nuts but I don’t think they grow in this far north. I substitute walnuts for Pine Nuts as they are available, affordable and healthy. Your gnocchi dish looks hella-delish!! Thanks for the nutty info. Ⓜ️ary🌲

You can swop them out for most other nuts in pesto especially ✨💕

i don’t think i’ve ever seen locally grown pine nuts where i live. i use other nuts in substitute.

You can find these pine nuts in India only for $ 2 a kilogram.

Do not peal the potatoes boil with skin on then remove the skin . It's how is made properly
