Please dont ever stop making this series. Its absolutely phenomenal. Would LOVE to see a few vegan options thrown in here and there. Thomas has nailed it, his personality was made for this. Thanks for the great videos!!

growing up, my grandma had a birdseye pepper plant. we’re taiwanese but the thai chilis work great in the food she made. I never knew what they were called, so thank you thomas!

Birds eye chili and cayenne are my favs, they're medium spicy and suitable for almost every dishes in my hometown

I'm planting Tabasco Peppers this summer and I hope to use them to make my own hot sauce. This video is incredibly informative as to the subtle differences between Chilies. There are so many different peppers but I think my personal favorite would have to be the Hatch Pepper. Thanks, Joseph, you inspire me to improve my culinary talents everyday. :)

I definitely love love love love your videos you explain everything fabulously. I have a question I'm having problems with the blue coloring every time I put the color on any mix that have eggs it turns greenish. I've tried gel coloring paste coloring and powder coloring. Do you have any recommendation?

Its about making bread and mine always turns out tough when its already cooled:( Hope you can recommend some tips on how to make (any) bread recipe that’s soft and fluffy in the inside. Thank you!!!

Also, after you chop/cut the peppers, if you're going to cook them, keep your face away from the pan! Those fumes coming off the peppers can be quite stifling!

There's no heat in seeds, they just happen to grow from pith where all capsaicin comes from, hence why they are covered with it. Just wash 'em and try. No one in my family eats even remotely hot stuff, so I just go crazy, nothing below 1 million Scoville. Except for Chocolate Habanero, I eat those dehydrated like chips.

Always use gloves, even when dealing with mild Shishitos. Capsaicin can hurt, and you will unknowingly touch your face, every time. That said, I grow peppers to every stage of red/green, and I buy peppers, too. Don't be afraid to add a bit in here and there into everything.

Are there any alternatives to cooking with wine? I have so many cookbook recipes that call for it, and I wonder if it will affect the dish drastically to not use wine, or if another option is possible..? 🙂

Yes! Touching your eyes with hands that cut chillies isn't fun. Even if you washed them three times with soap... xD

I wear gloves when I cook with Jalapeños. A couple of times when I made Jalapeños-cheddar biscuits, an hour later (after washing my hands) I rubbed my eye and it was not a good time.

Wash your hands with bleach after handling if you're super concerned. It's really helpful after a full day of processing chiles at home.

Can you talk about using ugly fruit and veggies? Those wrinkled, bruised and imperfect otherwise wasted foods. Food waste is a huge problem - Your description for picking ONLY the best peppers perpetuates the myth that only perfect will do.

Schuyler Smith I totally agree with you and was thinking exactly the same in that part of the video. I second your suggestion #kitchenconundrum no waste in the kitchen tips, please. Compost, and in general in the garden, is also a good way to use some leftovers, but being a conscious consumer/cook helps too. Thanks for your comment.

NinaB Catherine Let me double down and say, "YES!" Food Waste is a real problem. I'd like to see Urban Farm to Table would be great. Preserving Foods, Kitchen Organization, Storing in Bulk, etc.

I asked a few times last summer and fall for a preserving episode. I garden quite a lot, but don't use all the herbs... I was hoping for some fun ways to preserve them for cooking!

I think Thomas meant fresh vegetables not necessarily aesthetically perfect. But yes, no to food waste.

I totally agree! Food waste, especially fresh produce is a terrible problem here in the U.S. When shopping for jalapeno peppers, along with the shiny ones, I will also grab a few of the wrinkly ones, as long as they are not spoiled, and roast them on my stovetop using a cast iron trivet. They're wonderful! I slice them up and my husband loves to stuff the roasted peppers into his burritos and quesadillas. No one is the wiser and they taste just as good.
