Heads up people. She's not going to "tell" you what to do, or what choice to make. She's giving you information so that you can make the healthiest choices for yourself. Everyone's needs are different. That being said, what I understood is that Sprouted bread is best. Whole grain is best. High fiber that's not from cellulose. If you are diabetic multiply the total carb by the fiber.... you want a number that is 5 or greater. Her video's are some of the most informative I've ever found and I am typically research intensive. She's teaching me things I didn't know. And I am profoundly grateful. At the end of the day, only you can make the choices, that you decide are best for you. With her information, that process is much easier.

Hello. I am the Director of Brand Development for Simple Kneads, a gluten-free sourdough bread that you mentioned in your video. A customer sent the video over to us and they were confused. I watched it and I am also confused on how you came to your conclusions. Which ingredient in the bread is not whole grain? We don't use any refined grains, no starches, fillers or gums. Which are, as you rightly said, common in gluten-free breads. Also, a bit more clarity for you regarding the psyllium; You are right that it is high in fiber, and most people need more fiber, however this is not why it is in our bread. Psyllium is a natural binder that works amazingly well. Most gluten-free grains have little to no binding characteristics. So when making gluten-free bread you have to find something natural to bind it. Since we are not using starches, fillers or gums, we use 100% whole grain organic psyllium. If there are any further insights that I am missing, please advise.

@sandyduncan6167

Bread companies add psyllium as a binder because gf grains need something to help with binding. . You make them sound like theyre nefariously adding it to artificially boost fiber solely for the number on the nutrition panel. I would like to know how you obtained your nutrition education, because everyone knows medical schools spend about a half hour on it, and thats all.

Hi Doc thank you for all your info in all your videos! I have been making sourdough this year and now wondering if the dark rye is the best and einkorn flour, I bought whole wheat flour and that requires more hydration because of the husk? Is the whole grain gonna cause higher sugars to absorb? Is it a lower glycemic? Can a make a healthier homemade bread for my family? Thanks in advance! KellyB

Aldi sells a bread that is sprouted grains, organic, and the first ingred is wheat berries...you can see the smashed grain...it is very close to Ezekeil bread. A one pound loaf is $3.67...it is delicious and I love it...I'd been eating whole wheat bread and discovered it's not much better nutritionally than white bread...that's when I switched and never looked back.

@@jerrylisby3440 it has too much added sugar. Whole Foods has a few breads that are slightly cheaper than Ezekiel bread and almost the same ingredients. You have to read the label. Sprouts has one that is slightly cheaper and also has similar ingredients.

I enjoyed your video and thank you for taking the time to make it. Unfortunately I am so confused because so many “experts” online or youtube give such contradicting advice. Keto vs paleo vs low carb vs low fat vs plant based etc. with everyone giving reasons why they are right and everyone else is wrong. And also a lot of people saying our food pyramid recommendations are wrong. Doctors, even though they are very knowledgeable on illnesses don’t seem to have much education on nutrition unless they get educated themselves outside of med school.

6:29 psyllium husk is not just a laxative, it’s a seed where the husk is made of fiber which is phenomenal at holding water, hence trapping moisture in the bread. When the bread bakes the water expands thereby “fluffing “ up the bread in the absence of gluten threads which basically do the same thing.

Thanks. Good information. I believe that the problem with going off a ketogenic diet has to do with your body no longer being used to processing sugar. Not necessarily with eating fat. I did a low fat version of the Atkins diet years ago and ate only low fat meats and no dairy. When I ate corn a couple of months later, I really suffered from it because my body no longer knew how to process high carb stuff. I now no longer eat sugar, white flour, ultra processed stuff, and vegetable oils. Mostly whole fruits and vegetables and lean meats.

This is really great info . Thank you . I have a strange allergy . And that is to the sharp bran on wheat. So I cannot eat whole wheat or bran from wheat in any form. So I do try and eat rye as that doesn't bother me. But bread these days is very pricey and on a limited pension income is not always affordable but for the chaper ones. I try to keep a close eye on inflammation so despite some sugars and carbs I manage to keep it balanced. I also ride a stationary bike for 30 minutes most days. Adding a Boron supplement for my knee trouble has really helped keep inflammation down as well. And I try to get lots of sleep. And I love buckwheat. which is nutrient dense. I have found I need carbohydrates in our cold prairies climate. Oh yes that info on cold bread was very interesting . I do freeze my bread to shop less but is good to know. I think the rye I eat might not be whole rye but it seems to be adequate. However any suggestions would be helpful for any other kind of bread that would work for me?

The healthiest bread is HOME-MILLED grains that are non-GMO or organic, milled the day you are going to bake the bread. There is no such thing as truly whole grain bread from stores as it has no shelf life. There is NO legal definition on food labels for "whole wheat." They CANNOT leave the wheat germ in the flour or bread sold in the stores because it would not last long enough. Check out some of the lectures by Sue Becker, a food scientist that learned about this decades ago.

Very good information. Thank you! I subscribed. I know that Ezekiel bread is the best bread but it’s not as readily available and I tend to buy sourdough because it’s supposed to be to be healthy, or just a whole grain bread. I know that not all sourdough bread is made the same and if it’s from a bakery it generally doesn’t come with a list of ingredients. Thanks for explaining the ingredients in depth and their effects on the body. Really good information.

Thank you, I appreciate your detailed and helpful videos. There is A LOT of great info to unpack here, so much so that it's difficult to take it all in once through, and most of us don't have time to watch it over and over again to ensure that we comprehend and make note of all the important points, do's and don'ts, etc. The timestamps are helpful, but as others have stated, a summary of sorts or a checklist would be great too. Furthermore, the sound effects and constantly changing special effects were loud and distracting and made an otherwise informative and interesting video cartoonish and more difficult to follow. Instead of the ever-changing random pictures being flashed, listing out the info you're discussing would be more helpful and allow us to pause the video to make notes or even easier, take screenshots as we go along. Thanks again!
@anonymous-zn2iv

This is true. The sound effects are distracting, especially since there is so much information that we are trying to comprehend at such a rapid pace. I listen with headphones so that makes the sound effects even more intrusive to understanding.

What are your thoughts on whole grain breads made at home with an ingredient list of whole grain flour, water, salt, honey and yeastt or sourdough starter. I make some bread using store bought yeast as well as some bread made by using my sourdough starter. I only use flours that are labeled as whole grain such as whole white wheat, spelt, sprouted spelt, pumpernickle, etc. The flours are not enriched but are simply whole grains that have been milled and still contain the germ and endosperm. I've been treating a slice of my bread or a whole wheat english muffin as a grain serving when trying to create a balanced meal.

Great info,, the topics are on point, just what I want to learn about. However, often speaking and images go by so fast that I have to rewind for clarity to make sure I understand. A little confusing, so at the end of your videos, I am not always as confident as I am with other videos. For instance, Michael Pollan, William Li, Michael Gregor, all give complicated information, statistics, explain body processes, but at the end of their videos I feel informed not boggled. Not sure if it's slowing down, or making sure there is more clarity about WHAT TO DO, versus all the reasons why. We need to know why, but perhaps not more why than how to take action.

Yes. You can toast it. Bread is not a health food. But you can make it healthier by cooling in to make resistant starch. The reaction is not reversible with heat.
