Butter is the key. Cook your burger on butter. That’s what a lot of restaurants do that make them taste so rich and brings out the flavor. Salted butter is best. Whether cooked in a pan or on our Blackstone people always ask what we do or add to our burgers. Doesn’t even matter how we season it as long as we use the butter. And grilling the bun like he did also makes a big difference. So good! (Can do that in your pan on the stove just as easily and tastes just as good.)

Salt/pepper/red pepper flakes/onion powder/garlic powder. I take my thumb and make small dimples on the surface (so the oil doesn't run off), a little olive oil to soak into the ground meat before going on the grill. A little piece of cold butter/ghee on top melts in as it is cooking. Switched to a griddle rather than a grated grill and it seems even better. I'd put mine up against anyone.

'Restaurants are probably grinding their own meat' - No. Unless advertised as house ground they are almost certainly not. Even if advertised it's likely outsourced to a local vendor.

The restaurant I worked at consistently had great reviews on their burgers, and literally the only thing they did was use a brioche bun toasted on a flat top, season the burgers with Lawry's season salt, garlic salt, and pepper, and grill them on a gas grill. That's it. Didn't grind our own meat, we'd buy the meat logs from the distributor and cut them into roughly 3/4" slices (eyeballed, of course) to make our patties.

Yep -- my number one pet peeve is food that's inconvenient to eat. Some people are obsessed with presentation and forget that the entire point of food is to eat it. If you want to be known for giant burgers, just make it a larger circle, not some giant stack of crap that nobody can eat.

I used to work for restaurant depot, there would be people buying huge cuts of meat to slice or grind (also sold whole lambs and pigs [I cried]) - but there were more people who bought giant boxes full of frozen patties because a lot of restaurants don’t have every bit of equipment or enough time , especially smaller ones lol so that is definitely up in the air

I worked at a "high end" place. They regularly sent me to the grocery store before my shift for Hawaiian rolls for the sliders and canned puff pastry for one of the entrees 😂. If you knew some of the shortcuts a lot of "high-end" places took, you wouldn't want to pay their prices.

And then you have places like my fiance's family business where everything is made from scratch so the business thrives in a small town. Stonebakers pizza in marengo Illinois is the best for stuffed pizza and Italian beef by far in my opinion.

I'd say a good restaurant burger will consistently beat out 95% of home cooks. We're both great at it so we hold a bias. Most people can't produce something that can compete with a restaurant known for burgers. Same with steak. Super easy techniques but suddenly very difficult if you have zero drive for professional results or the care to execute properly.

Depends on what restaurant and how you prepare your burger at home. That's his whole point. Most people just use supermarket ground beef, or pre-formed patties. Also by "restaurant", he's not talking about fast food restaurants. He's talking about a burger at a good diner, bar, or a "boutique" burger where they make their own patties from good cuts of beef.

1'm 70 and I have never made a hamburger at home. Everything else just not hamburgers. Last week, in my small CA mountain town, some organization was cooking hamburgers, potato and macaroni salad etc for everybody (for free) and they were so good I asked the cook her secret. She got the 80/20 already made "pre seasoned" hamburger patties, not the Angus ones, sprinkled lowry's, garlic salt, and Italian seasoning, then cooked them on a flat iron grill. Delicious! Can't wait to do it at home.

I don't. I watch them cause I might get an idea I can use myself, but I find restaurants are almost always bland and uninspired, and I ain't paying 4 hours worth of work for some high end place that is on par with my food at home when a week's worth of food costs me 4 hours of work.

Depends what state your in. Some states I believe you can grind you own meats without a special licence.

Chef here, I’ve ground my own meat and you don’t need a meat processing license unless you’re gonna sell the meat retail (packaged). Not sure where you’re getting this info.

There are some great suggestions here if you're looking to make a better burger at home. But use what you have had great success with and top it with the cheese and toppings you like. And there's a lot of different God burgers out there and I won't knock a good burger recipe without trying it for myself first. But I like grinding my own meat and toasting my buns on a flat top like this short suggested. I like my burgers with colby jack cheese because of the texture and flavor. And I'll leave it at that because I've got my favorite toppings and methods of making a good burger and there's many different ways to make a great burger. Except for the fact that I like my burgers with Colby jack cheese, I wanna try this recipe.

Russian dressing is basically thousand island and ketchup. Most "secret" or special sauces are probably some variation of that with some relish or other stuff added in. Bbq sauce is mustard, ketchup and brown sugar or molasses. Your taste may vary, season and improvise to your liking.

I’ve done food service and delivered the groceries to the restaurants. They buy 73/27 blend ground beef if they still even make the patties by hand anymore. Most buy frozen patties and season them up. There are some more expensive restaurants that are brand, and blend specific and are not frozen.

Then again, if I go to Wegmans or Whole Foods or somewhere high end then I'm sure it's close, but the price at the butcher isn't crazy or anything. And yeah it's close to the price of steak because it is ground steak lol. It's either ground New York strip or Tenderloin blend. Can't remember offhand. About $12/lb maybe $16 I can't remember.

1. Don't over knead the beef 2. Add seasoning to only the outside of the hamburger patty. 3. Make sure the raw patty is flattened to be slightly bigger than the bun that's being used, because it will shrink while cooking. 4. Use a medium high heat to create a crust without overcooking the entire patty.

I don’t know a single restaurant that grinds their own burgers. Every place is just 80/20 ground beef on a flat top, most places are using the same mayo mustard and ketchup you can buy at the store, and a brioche or sesame bun you can buy at Walmart. The reason it tastes better is because food will always taste better when someone else is cooking it, there’s no industry secret that’s making that local diners burger special, just throw a patty on a grill or flattop and you will get the same experience.

I'm thankful to have a food service distributor in my city that's open to the public, and I even used to work there. I get my burger patties there. They come in a box of 32 and are 1/2lb each, a blend of chuck, brisket, and short rib, 77/23 lean-to-fat. Same exact stuff some restaurants use. I smoke them on our Traeger pellet grill at 225F for 1.5hr, then put on Deli American cheese and let them go another 10 minutes to let the cheese melt. Perfection every time. I've shared with family and friends, and some say that they prefer my burger over *any restaurant*.

I like to go with blue cheese instead of American as well as extra black pepper for a black and blue burger. I love Stilton for its pleasantly sharp and zesty flavor.

Great choice. A little steak sauce(like a drizzle) and some bacon are always great with a blue cheese burger
