Let the chefs know what mushrooms will be produced so they can plan them in future menu. You can also dry any extra; asians like them and has good shelf life

What mycology students and amateur scientists and even professionals are working towards methods of cultivating these wild mushrooms? There must be a way. There must be some trick to it that we haven't figured out yet. But if few people are actually working on experiments towards this endeavour, and then if when discovered is kept secret, that doesn't benefit anyone really. People should be working on this, and also sharing the knowledge with the world when it is discovered. I read in some book that tomato root extract was used in the cultivation of one mushroom. All we need is some little trick like that to add to the substrate. And then perhaps pH balance of the substrate, temperature, and light cycles could be important also. We can do this if we work together. I hope there are many more people carrying the torch for this, and pass it on to as many as possible. The more people trying more things, the closer we will be to the answer. Starting with some chanterelles and morels, and also cordyceps sinensis in agar, there must be a way to get them to fruit from a colonized substrate. It will be something I will be working on, and I hope many other people will work on it also.

Thank you for the reality check. Its taken me a year to figure out how to grow mushrooms consistently and im really close to taking mushrooms to the farmers market next week, but concerned on the best way to market to chefs. Really great info on how to work with chefs and strategies. Super valuable. Do you ever sell to grocery stores?? Thanks Brian!

..Maybe start dehydrating them??????? Enlarge your market and reduce dependency on fickle 'time-dependent' clients...while eliminating loss through spoilage... ...and online direct sales. Screw local market dependency. Something an invaluable good business plan and a SWOT and TOWS analysis should provide...

Mushrooms are a short life thing, difficult to ship, particularly over great distances. The market for dried is small and specific (medicinal/herbal required in Asian medicine and then specific varieties that Italians/French use in traditional cuisine).

@@poppapips7493 Yeah that is true. Some people really like dried Shiitake mushrooms, and use the water from rehydrating them as a stock. Also a great thing to do with mushrooms is make jerky out of them. It's like a kind of preserve. Also you could make other products with the mushrooms, like soup, which may not have a super long shelf life, but it's an option.

DEHYDRATE THEM TO SELL THEM THAT WAY. Absolutely minimize wasted crop. Power dehydrators with solar.

You're talking a good amount of money for the dehydrating facilities, the equipment to process (slice) them for dehydration, the dehydrators, the solar power system to power it. Then you have to package them, and work out the logistics of moving/selling them... It's not as simple as just drying a few mushrooms. It'd be better to sell wholesale to an outfit that would do the dehydrating and selling, if it came to that.

Also different regulations. In a lot of states u don't require licenses to sell fresh produce or mushrooms, but if u sell dried or processed or cooked mushrooms or produce, u need certain licenses. So, it depends on the business and if they want to get into all that. I new someone that sold shampoo, and made wht she sold. She needed a license, and they had to periodically come to her house and inspect it to make sure it's up to standards, she also couldn't own any pets because that's apart of their standard, so if she wanted pets she would have to own a separate building. So it gets complicated. Must be really clean to process food. Like you have to have a factory that's basically almost as clean as a lab. Went to a supplement company factory, everything is much like laboratory standards. While the mushroom farm is quite well managed it's no where near clean enough for processing food.

Connect directly to chefs on a social level. If I was still chefing it up in the kitchen, and someone offered to buy me a beer and chat, maybe even become friends, I’d be far more likely to purchase from them. This tactic is used in every level of sales from a micro level, to the execution of billion dollar dollar deals. I occasionally sell wild foraged mushrooms and it happens almost exclusively with those I have had at least a couple meaningful conversations with.

Sell mushroom jerky and offer them in gas stations. Tastes amazing its cheap and healthy.

So chefs want mushrooms with higher probability of maggots, beatles and slugs....lol good to know. Seems to me if u could grow the types they want, a cleaner version should be highly demanded. But I guess there's a lot u aren't or can't grow, such as mycorrhizael species... Chanterelles, truffles. Porchini u might be able to do, chicken of the woods u could definitely do. Maybe plant some trees impregnated with chanterelles. I think it was Paul Stamets that shared a story of a friend that planted some conifers, young ones, and made a huge spores slurry with fresh chanterelles and dumped it around their roots. Not too long after, like a year or two later, chanterelles fruited there.

in many US states, I live in Florida, you cannot sell wholesale...chefs etc...direct? yes, like at farmer's market but to think somehow you will have some multi million dollar business is not going to happen. Check your local laws to be safe and esp the tax laws...typically falls under some level of income to be considered a home business. 50K in Florida

We both grow in BC. Food Safe is provincial. I've made several calls for the requirements and I've had no luck. I told one person I grow Oyster mushrooms, and ended up talking to some one from the department of fisheries and oceans. I was just hoping that if Brian got through this he could give me some info.

What do you do with your spent bags? You could probably sell them to gardeners for growing in. Can bank some serious coin off the home gardeners following the whole organic way.

Love the idea of multiple streams. Networking can open up new channels as well. Being a sponsor of the local mycology club can generate a lot of good will. Maybe offer presentations at local public schools, or colleges. Never be a secret!

Never say always... chefs want quality and flavor... consistency is also a key issue.. Wild looks better on the menu.. flavor keeps them there. Slick sales tactics do not mean much in the kitchen, how people are eating and buying does.. Seek out fresh/local stuff, hope they like it.. Chef has a tough job

What about pricing? In Ontario we have a huge farm in Burlington so it is hard to beat $3 at loblaws or Walmart. A fruiting block with bag and labour that doesn't seem like much money at all. How do people get like $10/lb for oysters. It just seems implausible that some chef is going to buy a $50 box of mushrooms when they can get the same for $20 at Walmart or Superstore. What about health products? Extract powders. They seem like a way to maximize profit per pound. Is it difficult to do in Canada? I have a dream of starting a small scale farm to support my gf who has health problems and my son who is autistic with behavior issues so severe it makes it impossible for me to hold a normal job. My plan is to somehow get the land obtain 3 shipping containers and make my commercial kitchen/lab in one along with substrate sterilization area, incubation in another and fruiting chambers in another. Also will experiment with inoculating the property with various wild species for fun. If it works maybe another source of revenue. It just seems like there is far too much red tape in this country and too much competition in Ontario for this to be viable. Perhaps east coast where prices on food are much higher would be better. The problem there is the health care may not be as top notch as say living near Ottawa where we are at present. Also shipping fresh mushrooms seems like it would be expensive as they only have a 5 day shelf life many species it would have to be 1 day shipping. Even if you could get $10/lb no one will want to pay $30 shipping on top of that. What about focusing on selling dried rather than fresh and also mushroom kits and grain spawn? I would absolutely love to grow food for people but I also have a family to feed. Any pointers?

I would be concerned if I were a client and I just heard you say openly to lie about scarcity to gain a sale. That stuff travels fast in a tight group like chefs and will bite you in the rear. Never lie to a client period!

yes you can buy any kind of mushroom from anywhere in the world via Internet. Save your spore prints and revive your mushrooms when needed

I'm sure he has a small stash for himself only or to make a little bit of extra money, but he will be growing them in bulk in the next few years, considering the studies that are being done in London and in the USA, and how they can help with depression, anxiety, and drug/alcohol addiction. Plus the researchers are saying that it helps with memory, and improves brain stimulation, I've been mico dosing with phicodelic shrooms and I'm a recovering heroin addict who is on methadone, and it hasn't stopped me or helped me get off methadone,but I'm manic depressed and it can get so bad I can't leave the house or my room for weeks, but since I started mico dosing Ive been feeling better and more optimistic about life, if it's just in my head who cares, it's working now,so until I don't feel like it's helping me get back into my good mindset I'm going to keep doing it.... I hate AA but the people who have been sober because of it, then stick with it. And good luck to everyone who has to fight drug or alcohol addiction and any type of mental disorder, depression, anxiety, schizophrenia etc. And one more thing if you have a friend or family member who has schizophrenia and is married with children or not, if they ask for help even once,HELP THEM you could save there life or the life of someone else.(not saying that every one who has schizophrenia is going to hurt someone or kill, but if you say "pray, and God will be there for you" I don't believe in God but if there is one he has done nothing to help the human race we help each other, and in the bible it say to help your fellow man, many times, not pray to me and I'll fix you.)

Some farmers may want to have first hand knowledge of farmers production outfits. Some take their cultivation of professional relationships very seriously. If your a producer you should as well. Getting to know your valued customers especially in their slow seasons. Knowing a little bit about them personally is key to a long lasting business relationship. Cultivate your relationships and your business will grow. As a chef you may feature a meal. That relies on a specific product. If a mistake was made in ordering a proper amount of lets say mushrooms and you dont have enough to get through a meal for the night can. Is your relationship good enough with your producer that he might jump in and bail you out by delivering what you need an hour after your panicked phone call. Or do you have to 86 the star of your menue for the next couple of days.
