I don't know if I agree about Guilty Gear being complicated because of being system-heavy. I think the bulk of the complexity is in how different the characters are, even down to how they control. For example, normally in these kinds of games, for a really basic string you'd think you'd have 5P>5K>5S>5H>2D to fall back on, but for a significant chunk of the cast, having that in muscle memory will get you killed.
