Reminds me of a sandwich I had from a restaurant that's closed now. It was a meatball sub with chicken and pepperoni, with marinara and cheese on top and baked in the oven. The thing dripped down your elbows while eating it. So amazing. The place was called NY-NY and was in SW Portland. But the owner was from Brooklyn.

The fondness and respect I have for Chef Ramsey has grown exponentially over the years. I was once turned off by them just advertising that he was a tyrant in the kitchen on those first shows where he was introduced to us in the US. But if you're really paying attention you see through all the bullchit they use to drag in viewers. He is passionate about food and even more about good food. You also get to see he's a really good human being. Listening to him at his baseline personality you hear how much pure joy he gets out of cooking good food. If your pride is too much that you can't learn and evolve when he gives you suggestions, then why bother to say you love cooking, that you want your own restaurant business etc. He's the real deal!

He was absolutely right; temping proteins that are that thin I always trust experience over a thermometer. That is not the case for other items but you have to use you sense one that. Sight, smell, sound, touch, even your hearing are so important in the kitchen.

Regarding susi… Both “mistakes” don’t affect flavor. Other sandwich had more intense flavor vs Susie’s sando was the most balanced and simply great. Intensity of the other sandwich overwhelmed susi’s masterful sandwich

For those of you clearly struggling: premade doesn’t equal store bought😂 she made meatballs and sauce ahead of time, brought it to the event, and made her sandwich, which Gordon himself loved, even if Emmanuel was the winner. So. One more time: premade does not inherently equal store bought. Hope that helps some of yall out ❤
