If Muslims as a group were truly fasting and not gorging themselves at night then you wouldn't hear so many anecdotes presenting the same story and there wouldn't be a noticeable increase in weight gain during the Ramadan period.

The fasting is not voluntary. Only for health reasons, ex you are on medications for things like epilepsy, and some other reasons like a female being on her menstrual cycle, etc can one get out of fasting.
