Steamed Cantonese Fish
Fish:
* 1 whole fish
* Salt
* Hinds White pepper
* 6 Spring onion greens part only
* 1 Thumb size piece ginger, sliced
* 5 cloves garlic sliced
* 2 tablespoons sake
Sauce:
* 1 tablespoon sesame oil
* 1/4 cup soy sauce
* 2 teaspoons sugar
* 1 hot chili, thinly sliced, optional
* 1/4 tsp Hinds White Pepper
Topping:
* 2 tablespoons oil
* 1 Spring Onion, green part only, thinly sliced on the bias
* 1 thumb size piece ginger, peeled and sliced
* 4 cloves garlic sliced
* Chilli sliced (optional)
METHOD
Fish
- [ ] Turn on double boiler
- [ ] Layer bottom of heat proof plate with spring onions, garlic and ginger
- [ ] Sprinkle Chinese cooking wine, and white pepper inside and on both sides of fish
- [ ] Cover and steam for 15 to 20min
Sauce:
In a small bowl, whisk together the sesame oil, soy sauce, sugar, and chili, if using. Bring to boil then set aside.
Topping:
Fry on medium heat till golden brown and top it
