I gotta thank you Guga, I was a Chef for 20yrs or so and I lost my passion in cooking and retired from it. Wasn't fun anymore or happy. Watching your videos with experimental things with food got my back to having fun again . Thank you

My brother is a chef and I come from a family of chefs. I could never get into the profession myself because I'm disabled. My family didn't inspire me to get into food as a hobby and I don't really know what did because I've been making stuff that most people would call really unusual for most of my life, but I'm sure it's the 'unusual' part that's why I'm 40 and still doing it. Basically I've always had the drive to make normal things in really abnormal ways. Usually more healthy ways. A couple of my favorite things are making four ingredient flourless brownies using black beans (they have a coffee taste! I was so surprised), and fancy nachos with cheese made from cauliflower. It all strongly tastes better than the original things to me, and I love my junk food. Others do too of course, so I live to amaze them and make them realize that things they thought were impossible (such as for them to like what I make no matter how weird it sounds) are possible, and I feel it carries over to a life lesson. I definitely might not be telling you something that you don't already know, but maybe you can rekindle the passion if you do things you're "not supposed to do" in cooking, but make it work for you. I know I'd be burned out and unhappy if I didn't make my own challenges all the time. Culinary arts has a whole lot of rules for being an art form. I don't get how anyone can like it professionally just following the rules of the trade all the time and not their own. Miracles on a plate can't help but enthuse! Health and happiness to you in whatever you do, friend!

@@Veldrusara You pretty much described, why I dislike Design (hate would be too harsh of a term) but absolutely adore Art, and why I feel most things people call "Art" aren't actually 'art', just a refabricated idea hundreds, thousands, if not millions of other people have done before and developed rules for how to simply imitate it....which is Design. Like Portraits. Anybody who calls a portrait "art" is praising something, that is just...basics. Like how to use a knife properly, or that you have to wash your veggies or other basic stuff. Art is being able to define something new, being able to deviate from the norm. Picasso was an artist. But he started out as a brilliant painter. He started out with almost photorealistic paintings (when he was around 19 I think, can't remember the exact age). But none of those were "art", just him learning the basics (from his point of view! being able to paint photorealistic just at the age of 19 is a huge accomplishment initself!! Especially considering how easy it is nowadays to get the necessary materials, compared to the amount of luck and prestige someone needed to have/earn back in the day before anyone would even dare to finance ones works.). The art pieces he became famous for were minimalistic, damn minimalistic. Something never seen then, being able to create something recognizable with just one or two strokes. Nowadays a lot of his ideas have been implemented in commonly used design-elements. His minimalistic ideas sparked a whole revolution of imitators and people who based their new ideas on his (there were a lot more people involved in this and he obviously wasn't the only influence on modern design, but I'm trying to make a point here! xD). Paintings, music, animation, cooking, every form of craftsmenship is mostly "Design" and rarely actual "Art". BUT I guess people will never change that view on things, because most people would rather quickly say "Art" instead of "Design" letalone "Craftsmenship", which in any language I heard this word in, is still an unnecessary long word. A lot of "art" happens, when people actually just experiment with their craftsmenship of choice. If you create something, you have never heard of before, it is art! (Doesn't matter if it coincidentally actually aleady existed. That would only change the public perception, and the average person doesn't get art anyway so they would not care) Another rather modern example is RU-vid. The first YT videos that tied something new were definitely Art, but most stuff nowadays is just conceptualised to work on schedule, is planned to work and people expect how it should work. There is almost no 'art' involved. Looking at Gugas videos, most parts of those videos have nothing to do with "art". The videos are all the same, always. We got to hear Guga say "I know what you think. It doesn't look good right now but watch this!..." every time. It's expected. Heck even their reactions are to be expected. The only actual piece or art is the idea of what they cook, the experience to cook and then to taste it, which all-in-all is nothing we as the viewers experience...except for the idea part in this case, as it was a viewer-suggestion. ... I just realised that's far too long of a text... I'm sorry. Just went with the flow and it suddenly became so much I wanted to say.

I wrote at least a couple of 20-25 paragraph messages to people knowing that they probably wouldn't even read it to answer their questions about white holes and eleven dimension theory (astrophysics, though my forte is evolutionary psychology and behavioral science) because my passions speak for me, making it very difficult for me to consolidate things I want to say into only what's important because to me, everything's important and cutting anything out just feels wrong. That said, up until my early 20s I was still into drawing and then I got super passionate about any kind of sculpture. For my whole life, though, I've been intensely into writing. To me, the relationship of art, writing and design is all linked together. Art is the communication of a person's imagination and motivation. Art therapy can be phenomenally effective because the challenge in psychology is that others that look for help within that field usually don't know what's wrong with them or might even be falsely assuming what's causing their issues that isn't, and psychologists and counselors/analysts then need to play detective. Asking people, even if and especially if they have no experience in art, to create and/or interpret art very often gives an immense amount of insight into their minds and how they think that's equally as effective in figuring out what's wrong as how to help. Life is art, "life is poetry", like painting a mural of your experiences. There's a saying in creative writing that people can't stop themselves from putting a little piece of themselves into anything that they create... in any medium, words and visual arts alike. Art is trying to 'say' something, even if the only goal is to speak to others whether or not it's with your own voice, and writing is the mirror image---showing people things, helping them visualize them, by 'speaking'. Design is just starting with an intent instead of intending an expression. So, I totally get you. Cheers!

Guga, I’m from Ghana, and we love your videos here. We are asking you to experiment with some of our flavours. Because I like crazy stuff, I’m suggesting you do an experiment with Dawadawa or Locust Beans. All you need to do is blend it into a paste or powder and either age it for a day or as you like. It definitely has the Umami flavour. I’m waiting, Guga.

It is personal preference, but any time I wrap anything with bacon I half render the bacon on its own first. You still want it flexible to wrap and then finish cooking it after it is wrapped. If you wrap it raw, I always find that the bacon doesn't render through properly and I personally don't like having chewy undercooked bacon on the inside.

If you mean specifically for this video, yeah I think cooking the bacon half way and then for an additional 20 mins might be a little too much. But the concept of what the original commenter is saying still makes sense IMO. I see lots of videos like this and Bayashi, etc where the bacon is clearly undercooked and would still be very chewy. Cooking the bacon for a bit to render some of the fat first makes perfect sense to me. But if you like chewy ass bacon instead of nice delicious crispy bacon then go for it brother

@@WarkWarbly marmite is the British or ? American? Equivalent both yeast extract, as in what left after beer brewed IE process the sediment. You either hate it or love it. BTW I hate it in its neat form, as in would never eat on toast. But do use it in some cooked things like bolognese sauce, it adds a nice unami kick of flavour, I just have to keep the initial salt a little lower, then season to taste later.

Guga- Great choice on the countertop toaster oven! I have the same model and it is simply the best. I'm on my second one because I used the heck out of my first one ( 3 meals a day for the family.) First one lasted 5+ years with heavy use.

You should try it’s a Bulgarian mix of spices called “sharena sol” or “particlolored salt” it’s used on freshly baked bread, pastries and mostly on just buttered bread slice honesty I have no idea how it would affect a steak but I’ll be happy to see you guys try it

Hey Guga...I love your videos. You've converted me to a sous vide user and I can't thank you enough. I know that there is not much of a comparison between a charcoal grill and propane but I don't have access to a charcoal grill because I live in a condominium where we only have propane. Could you do an experiment using both and conduct a taste test with the boys? I really would like to know what the taste differences are. Thank you!

Hey Guga I made the Teriyaki balls at home. This one I truly enjoyed. Took some doing but it all worked out. I found for me that prosciutto worked well to keep it all together. The thick cut bacon 🥓 I needed higher temp and cook time. Great recipe🎉

Guga, you gotta try a berbere dry age experiment or could do awaze sauce for sous vi. It's the primary spice used in Ethiopian/Etitrean cuisine. Not sure what all is in it it but it's a lil spicy and smokey. So delicious. Dying to know what the results would be. Comes in a paste, powder, or sauce form. Soooo good!

After watching your videos, I have three requests for future videos: - How do you clean all your pans and other cooking ustensils so they continue to be so shiny ? - Please cook a foie gras in a terrine using sous vide. - Please try some other cattle breeds than wagyu and American beef. guga we still need an experiment face off. Choice Steaks combined with various experiments going up against each other and facing over against wagyu (Australian MS 5-7). The idea is can you make a normal grocery store steak match that top teir steak with the right care and if you get close, then upgrade to prime. The goal to see can we get the wagyu experience but at normal prices with time, ingredients, and tricks.

Guga! I have an idea. Everytime you try to marinate in liquid it pulls the juices out due to osmosis. And even worse can replace the juices with marinade stripping out the beef flavor. I’m curious if you can marinate in a small amount of liquid under pressure to infuse the flavor into the beef without stripping the beef flavor. You may need the science guy for this one

Experiment Suggestion :: Sous Vide steak in IPAs. My top three suggestions for IPAs to choose from is as follows. Voodoo Ranger :: Juice Force [Flavor Profile is Pineapple, Mango and Grapefruit with an ABV of 9.5%] Hop Valley :: Cryo Stash [Flavor Profile is Tangerine, Pineapple, Grapefruit with a touch of Honey and Caramel with an ABV of 8.7%] Ninkasi :: Total Domination [Flavor Profile is Orange, Grapefruit and Floral Hops with an ABV of 6.7%]. If I had to pick two of the IPAs to try along with a control I would say Cryo Stash(Hop Valley) and Total Domination(Ninkasi). Reason being is that the flavor profiles of Juice Force and Cryo Stash are very similar but the ABV is lesser in the Cryo Stash than it is with Juice Force and I think that would help in keeping the beef flavor in the steak. And the Total Domination has a very different flavor from both of the other IPAs, also with not a terribly high ABV. As well the Cryo Stash is unique in comparison to the other two as it is made with Cryo Hops whereas the other two are mostly just standard fermentation. Your next experiment should be sous vide steak then dip it into a fryer, than into liquid nitrogen them back into a fryer and repeat till the crust is good.

Try it on chicken. Also, try thicker longer rice-bacon balls. With things like cheeses, grilled onions, other vegetables, and thin or ground meats. Really flip it around by trying barley, mashed potatoes, grits, oatmeal, and Sorghum, instead of rice. Ten to twenty different inner stuffings. Six different out wrappings. Sixty to 120 different taste explosions. Which ones shall be bombs? Which ones shall be pure delight? Which ones shall be eh, - -?

While it would only work for well done cuts, I'd love to see sous vide vs tagine cooking head to head. Chicken, short ribs, brisket, and tough cuts of lamb, the tagine makes them tender and moist and absolutely flavorful if using Moroccan spices.

You should try dry aging in gjetost cheese. Very popular cheese in Norway. Slightly sweet and smoky flavor. Very unique but I’ve had a slice on steak and it was actually a delicious paring.

I was watching a restoration video, and they used an ultrasonic cleaner to clean some parts. Have you ever tried using an ultrasonic cleaner to try and tenderize and/or cook a steak or a tough piece of meat? Seems like an interesting experiment to me.

Hey Guga, I've been a fan of your channel for a few years now, and I have tons of experiments that I'd like to suggest. But I'll settle for this one. Can you use a dehydrator on san marzano tomatoes to make a powder and then dry age a steak with it. I feel like that would turn out amazing!
