Party Ribs - Spare Ribs
Ingredients:
2 racks of Spare Ribs
Big Poppa Smokers - Money Rub
Kosmos Q - Dirty Bird Hot
Kings BBQ - Rib Tickler BBQ Sauce
Directions:
Remove the membrane from the back of the ribs.
Cut the ribs into individual bones.
Season with Big Poppa Smokers - Money Rub & Kosmos Q - Dirty Bird Hot.
Set the Weber Kettle Grill up for direct and indirect cooking.
Preheat the Weber Kettle Grill to 300°.
Add the ribs to the grill on the indirect side.
Flip the ribs.
Flip the ribs so the edges are directed towards the heat.
Move the ribs over the direct heat.
Place the ribs in a pan, add the Kings BBQ - Rib Tickler BBQ Sauce and cover with foil.
Remove when they are tender.

5 - Finish: Place in a pan, add sauce, cover with foil, rotate pan, check for tenderness, cool, and serve.

Awesome! I'll do a half slab of spares or some country style 'ribs' on my Smokey Joe if it's just for me or full slabs on my OG Weber kettle. A kettle grill is perfect for rib cooks. It holds temp better than you would expect and doesn't take a lot of effort to get your temp dialed in. Make sure you have a good thermometer on the vent side of the lid.

Dang those look great! I just did a full rack of spares on the 'ol Weber last weekend at 225-240. Looks like I'll be trying these singles this weekend at 300. For pork, I like to use sugar maple or cherry wood, or even Japanese maple (cut down a couple in the yard last year). The J maple doesn't have a very distinct flavor, more like it just intensifies the charcoal flavor. I usually pull the ribs around 200, but where they probe tender, but not fall off the bone. Will Baby Backs work as well as spares as singles? Thanks. Oh, and for rubs, I like to use Kosmos Texas Beef and Kosmos Honey Killer Bee. I usually don't sauce (family members' preference) but I like a Carolina gold style, or Sweet Baby Rays when I do.

I hope the Baby Backs are as good as the Spares. Since I'm an impatient SOB (I blame my ADHD), just picked up a pretty meaty rack of Baby Backs for tomorrow. I also picked up an untrimmed full rack of Spares, in case I don't do the BB's properly. Then, I will learn from what I did wrong the 1st time (to some extent) if anything. I figure it's a Win-Win. Nobody here is complaining!

You skipped the single reason i clicked on the video. How did you go from a steamy mushy looking rib (not meant to be offensive, just how they look after being steamed), to the charred delicious looking ribs at the end of the video? You completely left that out

Thank you for the comment and I do appreciate the feedback. Looking back at the video and the unedited video, the only thing I did not show on camera was removing them from the foil and placing them on the plate. However, there was about 15 min of me taking pictures and setting up the shot. That allowed the sauce time to set on the resting ribs. Hope this helps. Thanks
